Finding the time for a FULL OAMM cooking day between the hectic spring schedule of 5 kids is almost impossible. April’s 10 Day Mini Menu has been a life (and appetite) saver in our house, as we rush between soccer games, baseball practice and church activities. The family friendly recipes offer enough variety to our meal rotation, and I can prepare and freeze them all in about 2-3 hours.
What are Mini Menus? Mini menus are a fraction of the meals you would see on a normal menu and can be completed quickly and efficiently in a few short hours, in the evenings when you are preparing the meal for dinner or during small bursts of times like naps. Mini meal plans are designed for the busy family who wants freezer meals in their freezer but doesn’t have time to do a full months worth of meals. Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

Approximately how much chicken is 14 cups??
Average about 6 lbs would yield 15 cups of raw, diced chicken.
I think there is something wrong with the Chicken & Bacon Carabanara recipe card, for me it said to use 0 cups of reserved cooking liquid from pasta. Also, I did 3 servings, and the skillet was very full!!
Sorry about that, there was a problem with that cell. It should be .165 cups for 1 serving, or .495 (1/2) cup of reserved liquid. And you are making enough for 3 servings x 2 so you are really making 6 servings which would make it quite full.
No potatoes listed on the shopping list for the stew?
Beth – I am not sure what menu you are referring to – but the 10 Day Mini April 2012 doesn’t include a stew recipe.

What a great menu! I’ve post my comment on the chicken lasagna and on the tacos already on my blog (sorry it’s in french…) and a lot of people were interested in your menus. Maybe someday, when I’ll have time, I could translate your menus (recipe cards, procedure, grocery list, labels, etc.) in french…
Oh my, that would certainly be an undertaking. We do need to figure a language thing out, don’t we?
For the moment, at least, I can certainly translate the menus that I did.
