It’s hot out there….and only getting hotter! Why not take time to enjoy these long summer days just a little more and do a little freezer cooking? This mini menu only takes a couple of hours to complete, and will stock your freezer with 10 wonderful meals! In this July menu, we have a wonderful Mexican dish, Turkey Verde Enchiladas, a great Chicken Pierogie Casserole, and an Easy Assembly dish, Baked Bean Chicken (bonus – it’s cooked in the Crock Pot!).
But, what really gets my taste buds going this month are two wonderful recipes that use lots of fresh produce, whether it’s from a backyard garden or a CSA box: the Roasted Vegetable Lasagna and the Asian Steak Kabobs. Squash, bell peppers, zucchini…..no matter what you are reaping at your house, this menu puts it all to great use. There is nothing better than being able to cook with fresh produce!
What are Mini Menus? Mini menus are a fraction of the meals you would see on a normal menu and can be completed quickly and efficiently in a few short hours, in the evenings when you are preparing the meal for dinner or during small bursts of times like naps. Mini meal plans are designed for the busy family who wants freezer meals in their freezer but doesn’t have time to do a full months worth of meals. Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:
- Melody Junk - Recently moved to Frisco, TX from central Florida with her husband and 2 daughters, ages 5 and 7. I am a school-based Speech/language Pathologist but I have an extreme passion for singing. I enjoy cooking, baking, “do it yourself” crafts, and spending endless hours on pinterest finding more recipes and craft ideas. My one piece of advice: Meal Plan!!!!

Wendi - I am a stay at home mom of two kids my daughter is 9 about to turn 10 (she thinks shes about 17 though). My son is 7. My husband and I have been married 17 years this year, we have been together for almost 20 years now. I am also a mom Taxi as my kid are involved in a lot of different activities. I love to cook meals from scratch for my family because I know what is going in them and I can pronounce the ingredients. I try to enjoy life as much as I can.

I’m new here, so please excuse my ignorance… but why is it 10 days if there are only 5 recipes? Thanks!! I’m so excited to try this technique of cooking out. I think it will really help me and my family!
Hi Yasmin – that is a great question! The 10 day mini menu is a collection of 5 recipes made twice for a total of 10 dinners. Hope that makes sense!

Thanks so much for this menu! I am printing it a bit late. lol. Anyway, I changed the grocery list to serve 7 people and it tells me I need 30 deep dish 8×8 pans. I am SURE that is wrong but would like to know the correct number. Thanks so much!
Please refer to the first page of the recipe cards – for 7 servings you are going to have to adjust the baking dishes to suit your needs, we write these formulas to best accomodate 4 servings. I would suggest using 2 9×13 pans for each of the recipes that calls for dd 8×8′s.
