I’m so incredibly excited to introduce our very first VEGAN mini menu. While I know we have vegans converting our monthly vegetarian menus, it’s great to have a menu just for them! And the selections we were able to incorporate this month are delicious Summertime treats packed with flavor. My personal favorites for this menu are the Take-Out Fake-Out Vegan Orange Chicken (INCREDIBLE!) and the Vegan “Meat and Potatoes” (portabella ‘steaks’) … they really do have the texture of steak, crazy!

What are Mini Menus? Mini menus are a fraction of the meals you would see on a normal menu and can be completed quickly and efficiently in a few short hours, in the evenings when you are preparing the meal for dinner or during small bursts of times like naps. Mini meal plans are designed for the busy family who wants freezer meals in their freezer but doesn’t have time to do a full month’s worth of meals. If you are new and not sure how to get started we have a wonderful series starting with 5 easy steps to get you on your way to once a month cooking. Good luck!

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Stacey Lorenz - I’m a stay-at-home mom to four great kids (9-year-old boy, 6-year-old girl and 17-month-old boy/girl twins).  We are trying to remove ALL processed foods from our diet this year.  You can read more about it (and check out some of our recipes) at SimpleintheSuburbs.com.

    I am so excited to have found this site. We are vegan and wheat/gluten free. We have Celiac Disease and the kids have Autism. We live in Alaska (on an island) and we order a lot of our food in bulk. As it has to be barged in or brought in by plane. Our house is not large and storing bulk food is difficult. I also homeschool my kids and days seem short, I just run out of time in the day to get things done. I love to cook, but sometimes I am just too tired and frazzled at the end of the day. This is great! Ten days and vegan…not too much and not too little. Perfect! Now that I have found this…please don’t stop!

    I’m going to do this mini menu this weekend, but there are a few things that are unclear or may be mistakes.

    For the brown lentil bake, is the measurement referring to dried lentils that I am then going to cook, or is it the total amount of cooked lentils that will go into the casserole? Also, the OAMM recipe card has twice as many lentils compared to other ingredients as the original recipe called for.

    For the pineapple quinoa recipe, I think that it is going to make twice as many servings as what it is labeled so I’m planning to half it. Also, in the freezing directions, it calls for freezing 8 servings in 8 pint freezer bags. Is there a reason that the servings need to be frozen individually, and it also refers to reheating contents of gallon bag, but I can’t tell what is supposed to go into the gallon bag.

    Finally, the Vegan Orange Chicken also calls for freezing 8 servings of the the sauce and seitan into 8 quart and pint bags.

    Sorry for so many questions, but this is my first attempt at bulk freezer cooking…which is why I’m starting with the mini menu. :)

      1) The lentil bake is cooked lentils, as indicated on the recipe card.
      2) Sorry about the container confusion. I have corrected the bags and wording.
      3) Yes you want the sauce and seitan to be separate.

      Hi Laura, not at this time. But we may consider doing another mini menu soon. Our vegetarian menus are easily adaptable to vegan though.
