Toddler Cheesy Potato Soup

The last thing I want to be is a short order cook, so I’m always on the lookout for recipes that will appeal to all members of my family. My husband has a favorite chunky ham and potato soup that while delicious, is difficult for our 15-month-old daughter to eat. Hannah is at the stage where she spits out any unexpected “lumps” in her food, and in the case of the chunky soup this meant she was spitting out all the good potato chunks. Enter the blender – puree the chunks!
This recipe was a huge success, Hannah gobbled it down, and my husband approved also. A great recipe that the whole family can enjoy. I served the soup with a little extra cheese on top, some freshly ground black pepper and a crusty bread for dipping. It was a great dinner for a cool fall day.

Serve with extra cheese and bread for dipping.
Toddler Cheesy Potato Soup

Ingredients:
- 4 tablespoons butter
- 2 medium yellow onions, roughly chopped
- 4 large russet potatoes, peeled and roughly chopped
- 2 bay leaves
- 2 1/2 cups chicken stock
- 1 cup shredded cheddar cheese
- salt and freshly ground black pepper
Directions:
Melt butter in a medium stockpot over medium heat. Add the onions and saute for about 5 minutes until softened. Stir in the potatoes, bay leaves and chicken stock. Bring to a boil then reduce heat and simmer for about 15 minutes, or until potatoes are cooked through. Remove bay leaves. Transfer entire mixture to a blender and puree until smooth. Pour puree back into saucepan. Add cheese, stirring until melted. Add salt and pepper to taste. Serve hot with a good crusty bread for dipping.
Freezing Directions:
Cool soup to room temperature then place 1 cup servings into quart-sized freezer bags. To serve, thaw in refrigerator overnight, pour into bowl and heat in microwave for 1-2 minutes.

This was wonderful, the whole family loved it and I had the rest for lunch the next day at work. A co-worker said that it smelt yummy!! So this recipe is 21 month old and 9 year old approved. I used my immersion blender instead and left a few chunks for us big people!
Thanks for the tip about the immersion blender. I don’t own one, but I think it would be great for these types of soups. Much simpler than transferring to a blender, then back again. Glad you enjoyed this recipe!
Do you think this could be done without blending? maybe just smashing with a fork? I dont own a blender, just a small personal style one, and that would be a pain to try to do all the soup like that!
Yes, you could mash the potatoes with a fork or a potato masher. You might end up with a slightly chunkier texture, but I’m sure it would be just as tasty.
My 20 month loves soup especially potato! I have been looking for a recipe to freeze to have on hand. I made this tonight and it is great. I used my crock pot so I could run errands and an immersion blender. Turned out super, thanks!

I made this for lunch today – I must have either used way too large potatoes or done something wrong because I ended up having to use 4 cups of chicken stock. After I blended it, it was like mashed potatoes. So we transferred back to the pot and cooked with more stock to thin it out.
That said, it was AMAZING. I added a lot more cheese when serving it and it was SO delicious. Thank you!
