Here in Iowa, the month of February  is typically very cold, windy, snowy and generally miserable. This lends to my cooking and baking coming out in full force, most likely whipping up “comfort” foods to warm up my family on the chilly nights!

Enchilada Meatballs

What are Mini Menus? Mini menus are a fraction of the meals you would see on a normal menu and can be completed quickly and efficiently in a few short hours, in the evenings when you are preparing the meal for dinner or during small bursts of times like naps. Mini meal plans are designed for the busy family who wants freezer meals in their freezer but doesn’t have time to do a full months worth of meals. If you are new and not sure how to get started we have a wonderful series starting with 5 easy steps to get you on your way to once a month cooking. Good luck!

Facebook Fan Party:

OAMM Facebook Fan Page Party – Month February 12th 2012, 9:00 pm – 9:30 pm EST – We will be able to chat via video AND messaging during the event through FACEBOOK! How cool is that? We will be talking about the current month’s menus, answer your burning questions about freezer cooking and have fun getting to know one another. You can also see other past recordings from that tab as well. This is a great way to meet fellow Once A Month Mom’s or get your questions answered as you get started.

  • Click on the “FB Fan Night” Tab on the left side margin.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

Teresa – I am a mother of three wild,crazy, and amazing children who keep me on my toes. I am married to an amazing man who supports my every move. I work a full time job as a design consultant and I am also in school.  I am working on a degree in history, while I am interning a couple hours a week at the local Art Museum. I do have my own photography hobby on the side (www.teresagilbeephotography.com) where I let some creativity flow. I also have recently started my own little blog,www.thefroggymom.blogspot.com, where I share some of my scatter brained life and ideas!

    This is going to be my first month trying this out. I put the numbers in the spreadsheet to make meals for two. What should I do when it says I need something like 3.58 oz of Cream of Chicken soup. It seems like I will end up having to buy a bigger can and use it all or just throw out the extra? Help!

      You might end up using half the can. If you put in a little more it shouldn’t hurt anything. You could also freeze the leftover and then use it next time you are doing a cooking day. It will freeze just fine.

    This is our first month trying this freezer cooking thing. We did some selective stuff from the Traditional menu for this week and I think doing double batches of this 5-day menu will be on tap for next week before we dive in to doing a full month worth of cooking in March. You folks are geniuses and I appreciate all of your hard work!

    Good morning, this will be my first time using any of your menus and I’m really looking forward to it. When I put in a serving size of 4 in the 5 day Feb. menu it says I will need 12 foil pans and 8 large ziplocs. Is this an error? Thanks

      yes, it is an error. You will need 1 foil pan or 1 large ziploc for each of the recipes that calls for them. I’ll work on making that change during naptime.

    I’m not sure how you could fix it, but doubling the recipes for 4 people (8) gave me 8 boxes of Jiffy cornbread mix and I’ll only need like 2.5 cups according to the recipe which I can probably get from only 2 boxes of cornbread.

      Laura – Yes, you will have cornbread left on this recipe. I usually just crumble half and then we eat the other half. Adjust accordingly and it should work great! Thanks for sharing.

    Hi! On the chopping amounts of the recipe cards, one of the night before instructions says to cook the italian sausage in a slow cooker, but in the additional instructions tab of the page it refers to chicken. Are you supposed to cook the italian sausage the night before or the chicken? :)

    Just had the cheesy potatoes and ham casserole, my toddlers loved it. I love the mini menu, a whole day of cooking seems a little overwhelming. There is an error in the formula for the Jiffy cornbread. I was cooking for four people and it said i needed 4 boxes, but only needed one. Maybe something got scewed when i converted the recipes to excel. Thanks for the wonderful website!

    I love the smaller menu. I usually just use pieces of the regular menu because it’s just way too much to accomplish at one time. With the smaller menu, I can get it all done at once.

    I do the Gluten Free Dairy Free Menus. Would gluten free cornmeal work on the meatball recipe instead because Jiffy has wheat in it. Thanks for the awesome work you guys do. Any plans for a 5 or 10 gluten/dairy free section?

      Loren-
      If you make a cornbread from your GF cornmeal you can certainly substitute it for the Jiffy Cornbread mix. In the recipe, you cook the cornbread first and then crumble it into the meatball mixture. As of now, we are just doing the 5 and 10 day mini menu for Traditional. Thanks for expressing your interest in a GF one though, we will keep that in mind!

    Hi! I am doing this for the first time, and to be a ding bat, BUT… if i put in the serving of 4, and it says 2 ziplock bags- does that mean that it will make two servings for 4 or two servings for 2?

      Yes Liz, a 10 day menu is 5 recipes that you make 2 of. The first page of the printable recipe documents explains this in detail. I hope that helps.
