It’s June! It’s June! Can you believe it? Pools are open, kids are out of school, and who wants to be in the kitchen slaving over a meal every night? Certainly not me! June’s 5 Day Mini Menu is super quick and easy on your big cooking day with only 2 to bake/cook! Included are two grilling meals, one crockpot, one oven and one quick reheat, so your nights can be free to enjoy your family, and enjoy your summer!
What are Mini Menus? Mini menus are a fraction of the meals you would see on a normal menu and can be completed quickly and efficiently in a few short hours, in the evenings when you are preparing the meal for dinner or during small bursts of times like naps. Mini meal plans are designed for the busy family who wants freezer meals in their freezer but doesn’t have time to do a full months worth of meals. If you are new and not sure how to get started we have a wonderful series starting with 5 easy steps to get you on your way to once a month cooking. Good luck!

Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

thanks so much for the link. I haven’t made the cornmeal crusted chicken in ages… It’ll be on the menu this week!
On the Cornmeal crusted chicken, I get this funny pink box, and two columns of quantities. Does anyone else have this? I am guessing that I use 2 lbs of chicken, not 0.67?
Sorry about that, you saw behind our “secret curtain”. If you download them again those boxes are gone. If you want to use the doc you already downloaded simply hide cell A & B if you know how to do that. Again, sorry for the confusion.
