May is one of my favorite months. Here in Iowa, the flowers start to bloom, the grass turns green, the windows are open, and we are outside all the time. This is great, except all the spring activities severely cut into my meal prep time! The May 2012 5 Day Mini Menu has our family’s favorite dinner recipes, including two that will require you to fire up your grill (SHUCKS). In only a few short hours you can have your freezer stocked, and then kick back and enjoy the glorious month of May!
What are Mini Menus? Mini menus are a fraction of the meals you would see on a normal menu and can be completed quickly and efficiently in a few short hours, in the evenings when you are preparing the meal for dinner or during small bursts of times like naps. Mini meal plans are designed for the busy family who wants freezer meals in their freezer but doesn’t have time to do a full months worth of meals. Kind of annoyed that I was supposed to be a test cook for this month, made all the recipes, sent in my feedback 3 TIMES with absolutely no response, and then I’m not given any recognition at all here. Definitely soured the way I look at OAMM.
Katie. I am sure that would make me feel less than appreciated to. Please note it wasn’t intentional. We do our best to keep everything straight here but juggling 10+ menus in a given month can be a cumbersome task at times. No excuse for not writing about our test cooks. I have it added and squared away now. Thank you for drawing our attention to our oversight.

Thank you so much for doing a mini-meal plan! I like the process of cooking a meal at the end of the day….most days. But I will LOVE being able to go to the freezer once a week. (Plus my freezer is not very big!)
I am a very busy working mommy (aren’t we all?) and a horrible cook, so I was a bit overwhelmed with jumping straight into a month menu. This May mini-menu was the perfect warm up for me. Since I made it last month, we have eaten all the meals and my family loved them! Between myself, the hubby and the 4 kids (ages 9, 6, 6, and 6), we have a variety of tastes to please, so I am thrilled with the results. Convenient and delicious! I have a full month cooking session planned next week. You’ve won me over. Thank you!!!
