Old Fashioned Almond Squares Recipe
Growing up in a Dutch family meant lots of almond flavored goodies, particularly around the holidays. The almond squares are in bar form, but are almost cake-like. They bake up nice and fluffy and have the perfect balance of almond flavor. Make these ahead and freeze to make a great treat with coffee when your holiday guests arrive. These bars are definitely company worthy!
If you’ve never worked with almond paste before, its not hard. It comes in a solid chunk, either vacuum sealed or in a can. I’ve never used the canned variety myself, so I’m not sure how that one tastes. To make your almond paste easier to work with simply shred it just like you would cheese. The shredded almond paste mixes nicely into your dough to give your finished bars a nice even almond flavor.

- 1 cup unsalted butter
- 3/4 cups white sugar
- 1 whole egg plus 1 egg yolk
- 1 egg white
- 1/2 cup almond paste, shredded
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1/4 cup sliced almonds
Preheat oven to 350 degrees. Cream butter and sugar in large mixing bowl. Add whole egg, egg yolk (reserve egg white), shredded almond paste, and almond extract; beat until well combined. Stir in flour.
Prepare a 9 x 13 inch glass baking pan by spraying bottom with non-stick cooking spray. Spread the almond mixture into baking pan. The dough is very thick and sticky so this will take some work. I do this step using the back of a spoon (not wooden) and a cup of cold water. Dip the spoon in the water, then using the back of the spoon, spread the mixture into the pan. Dip the spoon in water as necessary to keep the dough from sticking to the spoon. Beat egg white until foamy and brush over the top. Sprinkle with sliced almonds. Bake at 350 degrees for 35 to 40 minutes or until lightly browned. Allow to cool thoroughly before slicing into 2 inch squares.
Allow to cool before slicing into squares. Once your almond squares are completely cool, package in gallon freezer bags and freeze.
