Yes, folks, this is the REAL April 2010 Menu! Thank you to everyone who enjoyed my April Fool’s Day menu and for everyone being patient with the delay. Wait no longer, here is what we are really cooking up in April.

A majority of this menu was one of the finalist menus from the Once A Month Mom & DOLE Frozen Fruit Contest menu! It was Menu C from Kisti! It wasn’t chosen as the winning March 2010 menu, but there were lots of things that I liked about it for the April menu. I think that you will agree with me after the adjustments I made.

Instructions

Labels

These customized labels are designed specifically for the April 2010 Once A Month Mom Menu. They contain not only the name of the dish but also the serving instructions for preparing the dish on your serving day. They make preparation of the dishes hassle free.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

    I’m really excited, a friend and I are cooking tomorrow, ( i hope….. she has a sick child) our first time using your set up. We did one out of a book she has last month… did I say I was excited.

      I had a great time cooking yesterday with a friend. We did all the recipes, in about 7 hours. I loved the set up… was thrown by a couple of things but nothing too bad I couldn’t work out. Labels made things easier too.

    Wow! My sis-in-law just shared your website with me & I am amazed!! Thank you for all of the hard work that goes into the planning of these menus! What a blessing! After 7 yrs as a SAHM, I’ve been back in the workforce for over a year now & STILL seem to be juggling the “dinner/work/school/sports” thing. Your site is a Godsend! I’m very excited to get started with OAMC!

    One quick question… do you use boneless, skinless chicken breasts for all of your recipes? or should I buy bone in w/ skin?

      I use and make the grocery list with boneless skinless. You could do bone-in but it is more work and you would need to adjust the pounds needed.

    I was so excited to find your website. I’ve been wanting to do OAM cooking for awhile now but was overwhelmed by the planning of it (finding recipes, etc…) you totally took the guess work out of it and for that I am thankful! Yesterday was my first time doing OAM cooking and it wasn’t that bad. I even did it by myself. I do have one question though…I noticed Under the Menu list for April 2010, it says **Indicates meals that require NO COOKING on your OAMC BIG DAY! but there are alot of recipes that didn’t require cooking that do not have an *, such as Porcupine Meatballs or Chicken Cordon Bleu…did I miss something?

    Tricia: the menu has been so yummy! We’ve LOVED the eggrolls, the breakfast burritos, strawberry bread (even w/o the glaze!), muffins and twice baked potatoes. Today I’ve got the pork/mango thing cooking in the crock pot and my stomach is growling!

    about the molasses chicken, couldn’t I just pour the marinade over pre-frozen chicken? Same as with the pork? Also, you should try the chicken thighs if you haven’t. An less expensive cut, my hubs actually prefers the taste.

      Yes to your first two questions. And chicken thighs I am sure would be great and less expensive. I was just trying to keep the meats we were using simple. By all means, substitute thighs for your family!

    I just stumbled onto your blog by way of Simply Staci (via the Ultimate Blog Party)…WOW! Your menu for April looks SO yummy. I have been bugging my sister for about a month now to cook with me for a day so we can ‘solve’ our dinner delimmas for a month, but she is too busy going to culinary school and starting to plan her wedding.     the egg rolls are really great! we ate several of them before they could be frozen. we’re not once a monthers – just trying to work in more batch/freeze ahead so this is great!

    almost forgot – we did the fajitas the other night. after dinner one night we cut everything up, subbed yellow squash & zucchini for all the mushrooms, and put dinner for the next day in the fridge and froze the rest. also great!

    Chicken cordon Bleu was very good and will definitely make my list of repeat recipes. But I did double the amount of the cream cheese/swiss cheese mixture. It just didn’t seem like enough when I first put it together. I felt it still could have used more cheese when I served it tonight but everyone else thought it was fine.

    I’m getting ready to make some of these meals and printed out the Egg Roll recipe. I must be missing something – when are these frozen? Before cooking, or after an initial cooking?

    I was wondering if there are 10-15 breakfasts, 10 lunches and 15 dinners this month. I am new at this, so there is a lot of material to read and I may have missed something. So excited to start! Thank you so much for your hard work.

      Yes there are! The menu ALWAYS accommodates at least that much. I like to be consistent on that for sure.

          No problem, you should scan down to the bottom of the page and under “Resources” read the post on “Frequently Asked Questions” and “How to Navigate the OAMM Menu”. I put that here so that others who have similar questions can see. These are JUST the recipes that are on the menu – the printable menu cards is where you will see how much you are making. This menu feeds 2 families of 4. Most of the recipes get doubled, tripled or quadrupled to accommodate the meals. You will be eating each of the recipes twice throughout the month. Hope that helps!

    My mom and I cooked the April menu on Friday & Saturday. It worked better for us to prep and cook a few things on Friday and then complete the rest on Saturday. Our freezers are stocked and we’re now looking at planning another cooking day soon. I am expecting a baby in less than 6 weeks and want to get my freezer stocked well since I won’t feel up to this again for a while after the baby is born. Thanks for all of your hard work. It was pretty painless for two first-timers!

    I know this is an old menu, but I was wondering, with the Strawberry Bread, it states 3 cups 1 1/2 cups sugar. So what are we supposed to use? 3 cups or 1 1/2 cups? I was just a little confused on that. Thanks!
