Bleu Cheese Biscuits

Mmm…bleu cheese. Mmm…biscuits. Would you ever think to put the two together? My friend Helen, who is on a mommy’s forum I visit thought to do just that and shared her version with me. I’ve adapted it just a bit to make these delicious breakfast treats, which are also the perfect side dish for creamy Fall chowders, one of which I’ll be sharing next week. These little biscuits are subtle but power-packed with hidden pockets of deliciousness. It’s also simple to adapt to vegan by choosing soy bleu cheese, Earth Balance buttery spread and unsweetened soy milk.
Bleu Cheese Biscuits

Ingredients:
- 1.33 cups flour, sifted
- 2.67 teaspoons baking powder
- .5 teaspoons salt
- .22 cups butter, melted
- .5 cups water
- .33 cups bleu cheese crumbles
- 1.33 tablespoons milk
Directions:
Blend together milk and bleu cheese. In another bowl, combine flour, baking powder and salt. Blend in butter and cheese mixture. Beat until mixture is coarse. Gradually add water.
At this point, you can do drop biscuits by spooning the mixture directly onto a greased cookie sheet. For cut biscuits, place dough on a floured board; knead until smooth. Roll out to 1/2-inch thickness. Cut into 3-inch circles.
Bake at 400 for 15-20 minutes, until brown. Cool on a rack.
Freezing Directions:
After mixing and forming biscuits, flash freeze, plastic wrap and divide among freezer bags.
To serve: unwrap and thaw on a greased cookie sheet. Bake at 400 for 15-20 minutes, until brown. Cool on a rack.
Servings: 4 (Makes approximately 8 biscuits)
