Blueberry Quinoa Scones

I love blueberry breads of all varieties, but somehow I’ve never tried Blueberry scones. And now I find…what? Quinoa Blueberry Scones! So you mean I can have a complete protein in my awesome, delicious blueberry scones!? Awesome! These puppies are delicious and I highly recommend the recipe.

Blueberry Quinoa Scones

Ingredients:

  • 1 tablespoon butter, melted
  • 1 tablespoon honey
  • 0.5 cups cooked quinoa
  • 0.375 cup milk
  • 0.875 cup whole wheat flour
  • 2 teaspoons baking powder
  • 0.375 cup blueberries

Directions:

Mix together butter, honey and quinoa (cooled). Add milk slowly and stir until combined. Fold in blueberries. Mix together flour and baking powder, then add to wet ingredients. If the mixture seems too moist, add a little more flour (it depends how moist your quinoa is). The mixture should form a ball of dough. Roll out to 1″ thick and cut in wedges. Bake on a greased and floured sheet at 350°F for 15 to 20 minutes.

Freezing Directions:

AFTER baking, divide among gallon freezer bags and freeze. To serve: Thaw. Reheat in microwave for 15-30 seconds.

    Thanks for this recipe. I have been looking for simple summer recipes for my son (13) to make while he is off of school this summer. This is perfect if o I can only get him to put the blueberries in the recipe instead of eating them all first.
