What are Mini Menus? Mini menus are a fraction of the meals you would see on a normal menu and can be completed quickly and efficiently in a few short hours, in the evenings when you are preparing the meal for dinner or during small bursts of times like naps. Mini meal plans are designed for the busy family who wants freezer meals in their freezer but doesn’t have time to do a full months worth of meals. Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:
- Lisa Bergevin - My name is Lisa and I’m a stay at home wife and mom. I am a “misplaced” Florida girl who now resides in the Midwest I love crafting, anything with flowers as I used to own a flower shop before marriage, and of course cooking. We are a very busy family of 4 as we also home educate our 2 daughters. Sometimes I think they should have been boys b/c they are always doing something outside when the weather permits. And by outside I mean climbing trees and 4 wheeling when they can. Our whole family is budding foodies and love to try new recipes. Our youngest used to prefer Paula Deen to Dora the Explorer or any other cartoon. lol Along with the normal school day we like to take breaks preparing something for lunch or dinner. We enjoy the conversations that come up when working in the kitchen together. Now that we’ve tried cooking breakfast once a month and discovering how much they love that (me too!) I think we’re going to start doing that some more too. It sure has made mornings easier.
- Chris Clark - Chris is a stay at home Mama to two busy girls both under 3 and wife to an equally busy husband. Cooking and baking are a family affair with everyone pitching in. She also enjoys quilting and sewing and blogs about that irregularly atChristinajclark.com

Is it me or are the potatoes not being counted correctly or shown under the veggies to prepare the night before? I set this up for 3 people, and it said I needed 3 potatoes, but then the recipe only calls for 1.5 potato and is grated but doesn’t tell me to do that the night before. Just curious if just me. Thanks!

Thanks for correcting the potatoes. I’m also having issues with cilantro and green onions quantities. The quantity to chop the night before differs from the quantity shown on the actual recipe. I just joined the website so trying this for the first time tomorrow and chopping everything today.
