Breakfast Bagel Egg Sandwiches
Have I ever confessed that I am not much of a breakfast person? I just don’t care for many of the breakfast foods out there. I am cool with just starting with lunch really. Not cold pizza breakfast, but maybe buffalo chicken wraps breakfast!
However, my husband couldn’t be more opposite of me. He loves breakfast. In fact, every weekend he takes my son to #boysbreakfast. Apparently he sees some value in growing another breakfast lover.
If I am going to eat breakfast it is either a bowl of cereal or something warm and resembling the sandwich variety. So, I thought in order to excite my husband and to put something in the freezer that I might consider eating for breakfast, I made these bagel sandwiches.
Don’t be misled, they are not of the diet variety.
However, you can get the diet variety if you would like with Christine’s Egg White Breakfast Sandwich. Otherwise, feel free to enjoy this warm breakfast complete with everyone’s favorite ingredient, BACON!

Ingredients:
- 6 each eggs
- 0.5 cups Evaporated milk (you can substitute regular milk if you would like)
- 0.5 cups bacon, cooked and chopped
- 1 cup vegetables, chopped (I used tomatoes. Other recommendations include green onion, mushrooms, green peppers, and avocado.)
- 4 slices Cheddar cheese
- 4 bagels, sliced in half
- cooking spray
Directions:
In a large bowl, beat eggs. Add in additional ingredients except bagels. Spray an 8×8 pan and add egg mixture. Bake at 350 degrees for 15 minutes. Remove the eggs from the oven, stir, and return to oven to bake for another 10-15 minutes or until eggs are cooked through. Remove pan from oven and allow to cool.
Cut egg into 4 pieces and add one piece to each bottom of a bagel. Top with sliced cheese and top of bagel. Serve or if you prefer them served warm heat them in the microwave or on a panini grill.
Freezing Directions:
Prepare bagels as directed above. Instead of serving or heating, wrap in plastic wrap. Place in a gallon freezer bag. To serve: Reheat in microwave or on a panini grill until heated through.

These sound yummy. I love bagel sandwiches, but DH isn’t a
bagel person. I bet the Bagel Thins would also be good here. I had
to laugh about not adding the bagels to the egg mixture. Seems
obvious to me right now, but I can see how a tired or inexperienced
cook might dump everything in.
I love breakfast and could eat it for all 3 meals of the day. (and have). I make pizza egg bagels all the time. Low calorie bagel with egg whites and pizza sauce. Cheese of course is awesome but I don’t usually indulge in the calories.
These look amazing, it’s the kind of breakfast I like, Yum.

Can you provide more detailed reheating instructions on these? I froze 10 of these and the eggs were spongy when reheated, and the bagel was soggy. I don’t want to waste them!
