Buffalo Chicken Bites
If everything I made had buffalo sauce in it, my husband would be happy. For this diet friendly dish, I used a mild buffalo sauce so that my kids could enjoy it. These little bites would be great as an appetizer at a holiday party too.
Buffalo Chicken Bites

Ingredients:
- 8 oz chicken, cooked and shredded
- 0.5 cups hot sauce (I used mild buffalo sauce)
- 3 oz fat free cream cheese, softened
- 0.33 cups chopped green onion
- 2 cups cornflakes cereal, crushed
- 0.5 cups egg substitute
- 0.5 cup whole wheat flour
Directions:
Preheat oven to 350F. Line a large baking sheet with parchment paper. In a large bowl, combine chicken, cream cheese, hot sauce and green onions. Roll mixture into balls using a heaping teaspoon, and place on large plate. Repeat until no mixture is left. Place flour in a shallow dish. Place egg substitute in a second shallow dish and crushed corn flakes in a third shallow dish. Dip each chicken ball in flour first, followed by the egg then the corn flakes. Place each ball on prepared baking sheet and bake for 20-25 minutes.
Freezing Directions:
Allow chicken bites to cool completely. Flash freeze. Once frozen, divide among gallon size freezer bags. To serve: thaw and reheat.
