Buffalo Chicken Wraps
If comments on the Stuffed Buffalo Chicken are any indicators of readers love for all things buffalo, this recipe should appeal to your taste buds as well! This recipe was inspired by Laura who is a member of our House Church group and actually remembered to bring lunch on our Cincinnati Zoo trip and had enough to share with our family. They were delicious and a perfect idea for the Summer 2010 menu. So I adapted on her recipe and created my own. This is the fabulous result.

Ingredients:
- 2.5 cups boneless chicken breast, cooked & diced
- 1 cups celery, diced
- 1 cups bleu cheese crumbles (sub Mozzarella if you don’t like bleu cheese)
- .75 cups ranch dressing
- 3 Tablespoons buffalo wing sauce
- 8 each flour tortillas, large
Directions:
In a small bowl, mix together ranch dressing and buffalo wing sauce. In a large bowl, mix together chicken, bleu cheese crumbles and celery. Add ranch mixture to the chicken mixture and stir. Add 1/2 cup of the mixture to each tortilla and fold tortilla like a burrito. Cut in half and enjoy!
Freezing Directions:
Follow all directions above and then wrap in plastic wrap. {**If you are concerned about soggy tortillas (they shouldn’t be but there is a chance) you can simply put the 1/2 cup mixture in sandwich bags and put those inside a gallon freezer bag to freeze. Then assemble the tortillas when you are ready. You can add fresh veggies to them this way also.} Place in gallon freezer bag and freeze. To serve: Thaw. Cut in half.

Do you have a recommendation/recipe for wing sauce? These look really good!
I use Frank’s Buffalo Wing Sauce, but you could use just about any. I will see if I can find a recipe online and post it soon. I know so many of you like to do things the “whole foods” way!
To make your own Buffalo wing sauce…melt 1/2 cup of butter and mix with 1/2 to 3/4 cups of Frank’s Hot Sauce. (varying the amount of Hot Sauce will increase the temp of the sauce).
I love that this recipe comes with freezing instructions. This sounds so yummy.
Buffalo Chicken wraps are hands down one of my favorite things to make! I make mine in garden spinach herb wraps.. <3 LOVE

This sounds delicious and easy. Perfect for a picnic.
Made these today for lunch and to freeze. Very tasty! we’re a blue cheese loving family, so I used blue cheese dressing instead of ranch and I also upped the hot sauce to a generous 1/4 cup. I wrapped the ones for today with romaine lettuce and red bell pepper strips. I can’t wait to see what they will be like after the freezer.

Do you know how well these will keep unrefrigerated during the day? DH wants to take some lunches to work but doesn’t have a refrigerator in the office. Would they thaw by lunch if taken frozen?
Hmm, that is a good question. I might suggest defrosting them overnight and then packing them next to an ice pack to keep cool. They might thaw by lunch but I am not 100% certain.
