Burritos

Ingredients:

  • 1    pounds    ground beef
  • 15.5    ounces    pinto beans
  • 4.5    ounces    green chilis, chopped
  • 15.5    ounces    enchilada sauce, red
  • 1    packages    taco seasoning mix
  • 8    ounces    Monterrey Jack
  • 8    ounces    cheddar cheese, shredded
  • 8    each    flour tortillas, med-large

Directions:

  1. Brown ground beef. Before draining fat, stir in dry taco seasoning. Simmer 5 min and drain.
  2. Combine beans, chilis, beef; 1/2 can enchilada sauce, 3/4 Monterrey Jack & cheddar in large pan. Cook over low heat until cheeses are melted and mixture is thick. Let simmer a couple minutes.
  3. Microwave tortillas until slightly softened.
  4. Fill middle of tortilla with mixture and place in an 8×8 or 9×9 baking dish (fold side up). Spread remaining enchilada sauce over top & sprinkle with rest of cheese. Cover with Foil.
  5. Bake at 350 degrees for 30 minutes or until cheese are melted.

Freezing Directions

Freeze after covering in foil. When ready to eat, thaw in refrigerator over night and bake as directed. If burritos are frozen bake at 350 degrees for 1 hour.

    I love homemade burritos! We use a recipe similar to this but use leftover shredded chicken in place of the beef.
    Question – do you find the tortillas get soggy when frozen? I could definitely adapt my own recipe for the freezer but didn’t know what the tortillas would be like…

    I didn’t make this in the OAM rotation but used the recipe as a basis for cooking the other night. I didn’t have enchilada sauce so I used diced tomatoes with green chiles. Then after I’d filled the tortillas I still had some of the ‘goo’ at the bottom. I added sour cream to that, heated it again and poured that over the tortillas in the pan before adding more cheese and putting it in the over. Absolutely wonderful!! Little soggy on the bottom with all the liquid I had in there but the taste was incredible.
