Buttermilk Brownies
Growing up , these Buttermilk Brownies were my mom’s signature dessert. It was requested for birthdays, potlucks, you name it. And if you were lucky – it would be served with homemade iceream (oh heaven) . For some odd reason, it too me well into my 30′s to actually attempt to make them on my own. And once I did I was shocked at how easy they were! They are like truly like no other brownie you have ever tasted. The fluffy texture is almost cake like, but very light. And the frosting seems to just melt onto the brownie, creating an irresistible taste for your pallet.
Buttermilk Brownies

Ingredients:
- 1 cup cold water
- 1/2 cup oil
- 1 stick butter
- 2 cups sugar
- 2 cups flour
- 4 Tbsp cocoa
- 1/2 cup buttermlk
- 1 tsp baking soda
- 2 eggs, lightly beaten
- 1/4 cup buttermilk
- 1/2 stick butter
- 2 Tbsp cocoa
- 2 cups powdered sugar
- 1 tsp vanilla
Directions:
Preheat oven to 400F. Grease a large jelly roll pan (or cookie sheet with rim). In a saucepan, boil cold water,oil, and butter. In a medium bowl, combine sugar, flour and cocoa. Add the boiled mixture to bowl and mix completely. In a small bowl, mix together buttermilk and soda, and add to mixture. Finally, mix in the beaten eggs. Bake for 15 minutes. Cool.
While the brownie is baking, prepare frosting. In a saucepan boil buttermilk, butter and cocoa. Remove from heat and add powdered sugar, and vanilla. Using a hand mixer, blend until smooth. When brownies are cool, pour frosting over top, spreading evenly with a spatula to the edges. The frosting will seem very runny, but it sets up as it cools.
Freezing Directions:
Cool completely. Cut into 24 equal sized brownies. Flash freeze on separate baking sheet. Transfer to gallon freezer bag and freeze up to 3 months. TO SERVE: Thaw on counter or warm in microwave 10 seconds per brownie.
Servings: 24 brownies

I have a recipe similar to this. I actually took 2 different recipes and made one. One recipe was Texas Brownies and the other was Zucchini Brownies. I use a recipe similar to yours for the actual brownie, but add shredded zucchini (which you can not even taste) and I also substitute applesauce for the oil. Then I take the frosting recipe (similar to yours) from the Texas Brownies and frost the zucchini brownies. They are so yummy :)
This looks yummy! I have all the ingredients too. I’m going to make it this afternoon! One question, when you say “soda,” do you mean baking soda or soda pop? I thought baking soda, but in the directions, the soda is mixed with a liquid so it confused me. I’m probably thinking way too much into it!

Made these this afternoon! They were good, definitely a bit more like cake than brownies but very tasty!
my mom makes buttermilk brownies too, but she adds a layer of mini marshmallows on top of the brownie and then drizzles the frosting over them. it melts them alittle and she swirls the frosting and marshmallows together.. oh, how i wish she wasn’t 2000 miles away, i love those brownies!!
