Cheeseburger Boat Recipe (Kid Friendly)

CheeseburgerBoat

Another family favorite from the bowels of my mother’s recipe box! I was super excited to make this one again, it had been years. I was a little concerned about my husband’s reaction as he has been a bit gun-shy about meatloaf type recipes lately so I have to tread lightly. But I am happy to report this got a positive review.

I love hamburgers but we don’t have them too much in the winter months. This recipe is an answer to that problem. It is a layer of hamburger over a french loaf (or Italian loaf) and topped with cheese. We had it with fries but any side dish will do. Feel free to let the kids smother it in ketchup as well! I am sure they will love this!

Little Man helping me by making my cracker crumbs.

And the best part of resurrecting this recipe is that I found a new feature of this recipe I didn’t know I was going to love! The fact that my 2 year old son could help too! I put him in charge of making the cracker crumbs and eventually stirring the meat mixture. Of course, I let him crack the eggs too as that is his FAVORITE part of cooking! So don’t be afraid to get your kids involved in making this one!

Ingredients:

  • 1 medium French bread loaf (or Italian loaf)
  • 2 pounds ground beef
  • 1 Tablespoon mustard
  • 0.5 cup onion, diced
  • 0.67 cups evaporated milk
  • 0.5 cups cracker crumbs
  • .75 teaspoon Accent seasoning
  • 1 each egg
  • 2 teaspoons salt
  • 0.5 teaspoons pepper
  • 8 ounces Cheddar Cheese, shredded

Directions:

Slice the bread loaf lengthwise

Cut the bread in half lengthwise. In a large bowl mix all ingredients other than cheese and bread. Lay bread on foil. Divide the meat mixture among the two layers of bread and spread. Wrap and pull together the foil so that the bread is wrapped in foil, but not the meat portion. It should be open on top (See pictures below). Place on a cookie sheet and bake at 350 degrees for 40 minutes. Garnish with cheese and return to oven for 5 minutes longer. Allow to cool a few minutes, slice, and serve.

Freezing Directions:

Follow the above instructions taking a few extra steps. Before placing the meat mixture on the bread cover the bread with a layer of plastic wrap. Now lay out meat mixture on top of the bread. Add the cheese on top. Wrap the plastic wrap up and around meat mixture. Now lay out another layer of plastic wrap and lay the bread and meat mixture on top of that. Wrap that sheet up and around the bread and wrapped meat mixture. Now wrap all of that in foil. To serve: Unwrap all parts. Place frozen meat mixture on top of the frozen bread, removing the plastic wrap. Place inside the foil and leave an opening at the top. Bake at 350 for 1.5 hours or until meat is heated through. Slice and serve.

Servings: 8

Awesome idea! But mine wasn’t good we buy our ground beef in bulk and it’s a higher fat content and it cooked out into the bread and made it smooshy and gross. We want to try it again but will use leee percent fat. Thank you for all the freezer meals!
