Cheesy Tomato and Cauliflower Puree

Ingredients:

4 cups cauliflower florets

1 lb tomatoes, peeled, seeded and chopped

butter for saute – about 4 tbsp

1/2 cup of cheddar cheese, grated

Directions:

Steam cauliflower florets until soft. Saute tomatoes in butter until mushy. Remove from heat and add the cheese, stirring until melted. Mix the cauliflower with the tomato and cheese, puree until desired consistency.

    I love this idea! It sounds great for a gratin-style dish for the older people too, unpureed and maybe with some buttered bread crumbs on top.
