Cheesy Tomato and Cauliflower Puree
4 cups cauliflower florets
1 lb tomatoes, peeled, seeded and chopped
butter for saute – about 4 tbsp
1/2 cup of cheddar cheese, grated
Steam cauliflower florets until soft. Saute tomatoes in butter until mushy. Remove from heat and add the cheese, stirring until melted. Mix the cauliflower with the tomato and cheese, puree until desired consistency.
