Cheesy Veggie Pizza Calzones

Quite a few vegetarians I know have split families: some members are vegetarians and some are meat lovers. This recipe is a perfect meal solution. Because each calzone is made separately, you can customize each one, adding meat or changing the veggies as needed.

Ingredients:
- 1.33 pounds pizza dough
- 0.22 cup cream cheese
- 0.22 cup pizza sauce
- 0.33 cup broccoli, chopped
- 0.33 cup carrot, chopped
- 0.42 cup onion, chopped
- 0.50 cup mushrooms, chopped
- 0.67 teaspoon salt
- 0.17 teaspoon pepper
- 0.67 cup cheddar cheese, shredded
Directions:
Preheat oven to 425 degrees. Divide the dough into equal pieces. Press the dough into a flat disk, then use a rolling pin to roll into a circle. Combine all remaining ingredients in a large bowl. Place about 1/2 cup of filling on the bottom half of each circle. Fold the top of the dough over and press to seal. Slice a small opening on the top of each calzone, to allow for steam to escape. Bake for 10-15 minutes, rotating the tray half way through.
Freezing Directions:
Allow calzones to cool completely. Wrap each calzone tightly in plastic wrap and place calzones in a gallon freezer bag. Label and freeze. To serve: Allow calzones to thaw. Heat in microwave or oven.
Servings: 4
