Chicken Broccoli Casserole Recipe

I have just been waiting for the day when my husband would confess to broccoli being a tolerable vegetable. We dated for three years and have been married for nearly 4 years, so I have been waiting for quite awhile. Why was I waiting for him to like broccoli? For this recipe alone. I love it. Have always loved it. Would love to make it often. But alas, it has broccoli.

Then it happened. The moment I had been waiting for. One night at dinner I had served Isaac broccoli and all of a sudden my husband looked at me and declared that he liked broccoli. The skies opened up the sun shone. . . .okay, okay, I am getting carried away now. He did declare that he liked broccoli though despite his attempts to disdain it for so long.

So I dusted off this recipe and went to work. And the verdict from the newly converted broccoli eater? He LOVED it. He kept going on and on about how great it was. And I went on and on about how he had missed out on it for the last 6.5 years. (As only a good wife would do.)

Since this meal contains a vegetable, a protein and a grain I usually just serve a nice salad with it. It is absolutely delicious though. And it looks beautiful too! It is great to take to a large gathering or just to serve for an easy dinner. And PERFECT for when refrigerated biscuits go on sale at the grocery store.

Ingredients:

  • 10 ounces cream of chicken soup
  • .25 cups onion, diced
  • .25 cups mayonnaise
  • 1.5 teaspoons Worcestershire sauce
  • 1 teaspoon curry
  • 2 cups chicken, cooked & diced
  • 1 cup cooked broccoli, drained & chopped
  • .5 cups cheddar cheese, shredded
  • 8 ounces refrigerated biscuits

Topping

  • .25 cups sour cream
  • 1 egg
  • 1 teaspoon celery salt
  • .5 teaspooons salt

Directions:

Preheat oven to 375 degrees. In a deep dish 8×8 pan combine chicken, broccoli, soup, onion, mayonnaise, Worcestershire sauce and curry. Mix well. Sprinkle cheddar cheese on top. Bake for 20-25 minutes. Separate biscuits and each in half (see pictures). Arrange biscuit halves around edge of hot casserole, cut side down (see pictures). Place topping over biscuits. Bake at 375 degrees for an additional 20-30 minutes or until golden brown.

Freezing Directions:

In a deep dish 8×8 pan combine chicken, broccoli, soup, onion, salad dressing, Worcestershire sauce and curry. Mix well. Sprinkle cheddar cheese on top. (DO NOT BAKE as you do above.) Separate biscuits and each in half (see pictures). Arrange biscuit halves around edge of casserole, cut side down (see pictures). Place topping over biscuits. Cover and freeze. To serve: Do NOT thaw. Bake covered with foil at 375 degrees for 45 minutes. Remove foil and continue baking for another 20 minutes or until biscuits are cooked and golden brown.

Servings: 4-6

    SO you freeze it before you cook the biscuits or after it is cooked and cooled??

      You freeze it before you cook ANYTHING – don’t cook it at all. It is a bit of a different instruction set if you are freezing it. I have tested it too, it works just fine! :)

        It looks to me like you need to modify those freezing instructions. It appears to say you still need to cook it before you freeze it.
        This looks like a recipe my family and I would love! Can’t wait to try it.

    Any thoughts on a sub that could be used for the cream of cx soup? My son’s allergic to dairy. I can do w/out the cheese, but I haven’t been able to figure out subbing for creamy soups yet… Thanks.

    Sounds yummy and we are testing the recipe for dinner tonight! However, I did have a question. The photo directions call for cheese in the chicken mixture AND on top; the text directions only mention cheese on top. Should the quantity of cheese be greater, or divided?

      The cheese should be divided.

        Thanks! I didn’t see your reply before cooking, so I put all the cheese on top and it came out great. The only problem I had was that the bottom of the biscuits were still dough-ey despite the fact that the tops were golden brown and the casserole was bubbling when I removed it from the oven. The can I had was 8 jumbo biscuits instead of 10 normal biscuits so that may be why. Tomorrow I will reheat the leftovers covered with foil and hopefully that will finish cooking them.

        Forgot to mention that everyone LOVED dinner tonight, so thank you for a wonderful recipe that I am sure to use time and again! PS I didn’t have curry powder so I eliminated it, and I used about a tablespoon of dried minced onion instead of chopped onion.

    We did this one as a test, and, while I think it’s a great idea, it didn’t work for our family. The canned soup (1 can divided for two casseroles) made ours almost inedibly salty–maybe the reduced sodium kind would be better–and also really processed-tasting. I would also go lighter on the curry powder next time by about half. Also, the frozen biscuits really did not work. In the future, I would do the biscuits once the foil comes off during cooking (which took us at least 45min in a 9×9 pan that wasn’t filled up). I think it has a lot of potential for us though!

    I also found it to be salty/processed tasting. Maybe I could use the low sodium or cut the soup. I think it would also be good if there were rice or potatoes in it. But a good start, goes from freezer to table beautifully. Need to work on the soup.

    Made this for dinner last night and the flavors were excellent, but it was incredibly salty. We made up the extra biscuits just to balance out the excess salt. In the future (for the one going into the freezer) I will use only reduced sodium soup and also not add any salt into the mix. Thanks for a fabulous recipe!

    I’ve made this twice now and have given the recipe to at least 10 people. My incredibly-picky daughter LOVES this as much as I do. We sit and eat it in silence–all you here is “mmmmmm.” Haha! And it looks so pretty it is perfect for company or potluck. Thanks!

    I tried this recipe….and it really did not work well for me and my family. Although, the taste was ok….the bisquits did not work. I froze it and the bisquits never cooked through….consistancy of a dumpling. If I tried it again, I probably would not recommend freezing it.

    We tried this recipe tonight and the cooking directions did not work. It was still cold on the inside after following the cooking directions, however the biscuits were burned.

      Hmm, I have had that on occasion but it is usually when I put the biscuits too close together. I sometimes double the cooking time puttting a piece of foil over the dish while it cooks the first half and then remove the foil the second half. Sorry about that.
