The first time I prepared this shrimp, it received rave reviews from all the men in the family. The marinade is a mixture of spicy, smoky and sweet which flavors the shrimp well. Any size shrimp can be used but I typically pick up large. If it is still grilling season, the shrimp can be cooked on the grill as well.

- 0.25 cup brown sugar, packed
- 2 medium chipotle peppers in adobo sauce, chopped
- 0.25 cup canned adobo sauce
- 6 teaspoons minced garlic
- 2 Tablespoons water
- 2 Tablespoons lime juice
- 1 Tablespoon extra virgin olive oil
- 0.25 teaspoons salt
- 32 ounces uncooked shrimp
In a saucepan, bring the brown sugar, chipotles, adobo sauce, garlic, water, lime, oil and salt to a boil. Cook and stir for 2 minutes. Remove from heat and allow to cool.
Place shrimp in gallon size freezer bags. Pour cooled marinade over shrimp. Freeze. To serve, thaw. Place thawed shrimp on a cookie sheet or broiler pan and broil 4″ from the heat for 4 minutes. Turn and continue broiling 3-4 minutes.
