Cinnamon Pear Popovers

Nothing says fall to me more than cinnamon flavored anything and everything. These Cinnamon Pear Popovers do not disappoint. They are light and airy with just the right amount of crispness from the pears. Pears are just the first fruit to start with and a delightful change from cinnamon apples. But let’s be honest, cinnamon apples would be phenomenal in these. Or bananas, or cranberries, or blackberries- you see where I’m going with this. I like to eat the popovers for breakfast but they are a light dessert as well in a season full of sweets. Let me know what fruit combinations you try out!

Ingredients:
- 1 cup flour
- 0.5 teaspoon salt
- 1 cup milk
- 2 medium eggs
- 0.75 cup chopped pears
- 0.5 Tablespoon sugar
- 0.5 teaspoon cinnamon
Directions:
Preheat oven to 425. Combine flour, salt, milk and eggs in a bowl and beat until just smooth. In a small bowl, mix together pears, sugar, and cinnamon. Once pear mixture is combined, set aside. Spray muffin pan liberally with nonstick cooking spray and fill halfway full with flour mixture. After filling the cups, drop one tablespoon full of pears into the middle of each muffin cup. Bake for 15-20 minutes, until golden brown.
Freezing Directions:
Flash freeze. After freezing, place into a gallon freezer bag, label, and freeze. To serve: reheat in microwave for 1 minute.

Do you think white whole wheat would work in these? I prefer whole wheats, but these look wonderful!

This definitely isn’t the healthiest way to eat these, but… we ate them with maple syrup on top, and they were great!
I made these tonight with apples, but they were super dense and never got crispy. We just ended up picking the apples out to eat. Any suggestions?

My popovers were delicious but didn’t puff up. Any ideas?
Maybe the pear pieces were a little too big and weighed them down? Or maybe it was the flour. I’m not sure. I’m glad they still tasted good though!
