Corn Dog Muffins

A few weeks back I was inspired by the Mac & Cheese Casserole Cups on the July Menu. I was looking for a similar thing with corn dogs and instead decided to come up with my own. The kids should love these. If you have littler kids you might try dicing the hot dogs up into finer pieces to prevent choking. Enjoy. (Hint, hint: you will likely be seeing this on the September menu)

Ingredients:
- 1 Jiffy Cornbread Box Mix
- 1/3 cup milk
- 1 egg
- 2 hot dogs cooked, quartered or diced
Directions:
Dice up the hot dogs. Mix the Jiffy mix, milk, and egg. Stir in the hot dogs. Fill muffin cups 2/3 full. Bake for 15-20 minutes or until lightly browned. Allow to cool.
Freezing Directions:
Once cool place in gallon freezer bag and freeze. To serve: reheat in microwave for 1-2 minutes or until heated through.

We love these, but I use creamed corn instead of the milk…sometimes 1/2 can, sometimes a whole can. Makes them stick together a bit better, and gets a veggie in them! Thanks for sharing!!!

Go to http://www.godairyfree.com and search for corn bread recipe. Use that instead of the Jiffy mix. I make those corn muffins all the time and my kids love them. I add shredded zucchini when I make them.
How much zucchini do you add? I love that idea!

I can’t believe I never thought of this. It combines two of our favorite foods. It can’t get much easier. It might even be good to put some chili over them before serving. Or even add a little cheese when baking. My mind is overrunning with ideas. Thanks

We did these using a premade mix from Krogers in their dairy section. I had gotten them on manager’s special for 49¢. They were really good! My kids and DH ate them up. This dish is definitely a keeper and inexpensive to make!
I don’t like hot dogs, but I do like corn dogs every once in a while. I am looking forward to seeing these on the September menu along with all the other great recipes that I’m sure you’ve found for us.
That Jiffy mix stuff is way to sweet for me, but I’m going to try this with one of the other mixes, like Martha White. I think my son would take these in is lunch.

I have been lurking on your site for a while. I keep thinking I am going to do this, but have not yet. The other day I saw this recipe and I realized I had everything to make these. I made 2 batches while dinner was in the oven. I added a handful or two of shredded cheese. I also mixed up everything and then froze the batter. The other day I pulled the batter out of the freezer after breakfast and then baked them when it was time to fix lunch. My kids loved them and ate all of them!
These would be fun to make in the sandwich maker also!
We make corndog casserole all the time. We add 1 Tbsp of brown sugar to the Jiffy mix and also use 1/2 c. milk and they do taste just like corndogs. I’ve never made them in cups, so I might try that so I can freeze some for busy days.
Great idea! What temp do you cook them? I am assuming 350, but didn’t know for sure. Thanks!
I did 400 degrees because that’s what the box said, and they turned out great.

Love these! My son has to pack lunch at his preschool and he doesn’t like lunchmeat, and they’re not allowed to bring peanut butter.. These will save me!
I made these for my son the other day and called them muffins. He kept asking me for more and he isn’t much of a hot dog eater. I put a point in my column!

I made them and they are delish! I did what another poster said and increased the milk and added a Tbsp of brown sugar. One question–should you cook the hot dogs first? I did, but am wondering if I needed to.
I think it is best if you cook them first. I need to review that recipe to make sure that step gets included.
These look great. I’d definately pop a few into my freezer for those crazy nights when there’s not only no time to cook, but hardly time to eat.

I add a half-package of Lawry’s Spaghetti Seasoning mix to the Jiffy mix, egg, milk batter. The idea came from Sandra Lee of Semi-Homemade fame, and while I admit it sounds odd, the taste is very similar to that of a midway corn dog!

These were a hit. Had my 6 yearold daughter make them mostly by herself. The changes I made were 1 tbl spoon of flax seed meal (to had more fiber) 3 hotdogs, hand full of shredded cheese. Made just one batch and there were all gone. We will be making these again and I will make a dbl batch to freeze some. Thanks

Made these last night and put them in everyone’s lunches. My husband and son loved them! My daughter just picked out the hot dogs. I love all the ideas that can be packed in lunches, my kids get so burnt out on sandwiches by this time of year. Thank you so much for all the great recipes you post. My son would LOVE these but not sure how to pack them for lunch. Can they be kept room temperature? Do you serve them cold? I just wondered how to pack them (BTW, my son is just entering Kindergarten so I am new to this packing lunch thing).
