Cranberry Couscous Salad

Cranberry Couscous Salad

Ingredients:

  • 1 cup water

    The line up of chopped ingredients

  • 3/4 cup uncooked couscous
  • 3/4 cup dried cranberries
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1/2 cup chopped seeded cucumber
  • 1/4 cup green onions, sliced thinly
  • 3 Tablespoons balsamic vinegar
  • 1 Tablespoon olive oil
  • 2 teaspoons dijon mustard
  • 1/8 teaspoon ground black pepper
  • 1/4 cup almonds, roasted and slivered

Directions:

In a saucepan, bring the water to a boil. Stir in the couscous. Remove from heat, cover and let stand for five minutes. Fluff with a fork. Cool for 10 minutes. In a bowl combine the couscous, cranberries, carrots, celery, cucumber, and green onions. In a small bowl, combine the vinegar, oil, mustard and pepper. Pour over couscous mixture; mix well. Cover and refrigerate. Stir in almonds just before serving.

Freezing Directions:

Not recommended for this recipe.
