Crispy Buffalo Tofu with Blue Cheese Dip
Seeing buffalo wings advertised last weekend for the Super Bowl made me miss their spicy crunchiness and the refreshing blue cheese dip served on the side. I decided to recreate these flavors using tofu instead of chicken, and let me tell you, it did not disappoint. If only I had thought to make these before the Super Bowl!
Crispy Buffalo Tofu with Blue Cheese Dip

Ingredients:
- 12 ounces tofu, pressed and cubed (see pressing instructions below)
- 0.25 cup butter, melted
- 0.25 cup hot sauce
- 0.5 cup flour
- 0.5 cup buttermilk
- 0.5 cup Greek yogurt
- 0.33 cup bleu cheese
- 1 teaspoon Worcestershire sauce
Directions:
To press tofu: Place tofu between two flat surfaces, like plates. Add weight (cans, bags of rice, etc.) and allow tofu to sit for at least fifteen minutes. This can be done overnight, as long as you place tofu in the fridge. Discard the water and your tofu is ready to use.
Combine butter and hot sauce and set aside. Place the flour and buttermilk in separate shallow dishes. Coat each piece of tofu in flour and then buttermilk. Spray a medium size skillet with cooking spray and heat over medium-high heat. Place the tofu in the pan in a single layer and allow tofu to cook on each side for 5 minutes, or until golden brown. Coat tofu in the hot sauce mixture. Combine Greek yogurt, bleu cheese and Worcestershire sauce and serve alongside tofu.
Freezing Directions:
Place prepared tofu on a baking sheet and flash freeze. Remove from freezer and place in a gallon freezer bag. Place bleu cheese dip in quart freezer bags. Label and freeze both bags. TO SERVE: Thaw. Reheat buffalo tofu in microwave or in oven at 400 degrees for 5 minutes, or until warm. Serve with bleu cheese dip.
