Crockpot BBQ Meatballs
This time of year means lots of gatherings with friends, especially on Saturday and Sunday evenings to watch the big football game. A staple of our gatherings is meatballs in the crockpot. Unfortunately, those meatballs usually aren’t very diet-friendly and leave me feeling more guilty than satisfied! This light version of a fall favorite will satisfy that meatball craving without putting a dent in your diet!
Crockpot BBQ Meatballs

Ingredients:
- 1 lb. 99% lean ground turkey breast
- 1/4 cup plain breadcrumbs
- 1 egg
- 1 clove garlic, minced
- Salt and pepper to taste
- 1 cup ketchup
- 1/2 cup white vinegar
- 1/4 tsp. garlic powder
- 1 tsp. chipotle chile powder
- 1/2 tsp. onion powder
Directions:
Stir together the turkey, breadcrumbs, egg, garlic, salt, and pepper. Use your hands to roll them into small meatballs. Place meatballs in crockpot. In a small bowl, mix together remaining ingredients for the sauce. Pour over meatballs. Cook on low for 6-8 hours, or until done.
Freezing Directions:
Prepare recipe as directed above. Cool meatballs completely, then pour into gallon-size freezer bag. Label and freeze. To serve, thaw in refrigerator, then place in crockpot on high for 2-4 hours or until heated through; or heat on stovetop over medium heat until hot.

Can this recipe be prepared but not cooked? In other words, can you roll the meatballs and flash freeze and then defrost and put in the slow cooker?
Yes you can certainly do that.
I made this today. It was a little sweet for me (probably because of the ketchup). Any suggestions for a less sweet sauce?
You might try tomato sauce instead, no added sugars there.
