Can it possibly be the last month of 2010? Where did this year go? I can hardly believe it but it is here. Did you survive the holidays? Did you do a once a month cooking day? Or did you skip because of the extra holiday preparation? Whatever your story, I know, in general, many of you postpone once a month cooking until the first of the year and the holidays are over. However, for those of you that want to keep your budget in check and want to have meals ready for when friends and family visit, I give you the December 2010 OAMM Menu.

This month you will find that ham, holiday baking items and holiday preparation items like green beans, gravy, etc. And produce you will see pears, cranberries, sweet potatoes and mushrooms. Hence several of the menu items concentrated around cranberries and mushrooms!

And don’t forget about the Holiday 2010 eCookbook is available to help you prepare your Christmas feast ahead of time. Nothing like being an uber-prepared so you can have more quality time (or sleep) during the holiday.

I hope you enjoy these meals as much as our early readers/cooks have. If you are new and not sure how to get started, read here. For frequently asked questions visit here. And there are several other helpful links under the Helpful Hints/Resources section below to help you on your cooking journey. Good luck!

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cooks:

  • Anne B – I’m married and a mother of one active little boy. The “old ways” of canning, preserving and making everything without pre-packaged store-bought ingredients appeal to us. We are learning to raise food in our garden and think more frugally when it comes to what we eat. I blog at: http://proverbswealth.blogspot.com.

The risotto sounds delicious and I just may have to try that. Don’t have Romano cheese around, but may pick some up at some point.

I am surprised that pineapple freezes well. Did you use fresh pineapple, or canned?

I haven’t had as much time as I would like to check out blogs this past month, but was excited to see this post. As mentioned when we chatted at BlogHer, I get lots of OAMC requests for dairy-free, but don’t really have the hang of how it all works. Seeing menus and some of the recipes you have posted helps me to understand the concept. Oh ye of tiny freezer :) Thanks!

  5. Tricia,

How are you supposed to know how many of each meal we are making? I have read through everything but can’t tell from the printable recipe cards.

    • Doretta says:

At the bottom of the recipe list there is a number of containers needed (4 quarts size bags, 2 pie plates). This was my “give away”.

  12. I like this blog very much, Its a very nice spot to read and obtain information.

  13. We always turned the temp down on the freezer and used it for beer. You can never have too much beer storage space. Do you need to reduce the size of the fridge to fit it somewhere or do you just not need the freezer?

  14. Emy says:

Planning my next cooking day(s) and looking forward to it! The first time I did it was Saturday & Sunday after Thanksgiving – crazy but so worth it! Just wanted to bring to your attention that the ingredients for the Holiday Quiche need to be doubled. The half menu is really for one pie and whole menu for two. Also crossing off the direction to turn the oven down to 350 after baking the shell. Just FYI!

    • tricia says:

Based on the fact that it is a little hard to store, I meant for it to be only 1 or 2 pies and not 3 or 4, should have mentioned that. Feel free to double if you would like.

Hello, first let me say I was searching for make-ahead freezer meals websites for a long time and I am so happy I found your site! I appreciate how much work you put into this. Since my hubby is a picky eater I went through each month and printed out recipes I knew he would like and did my first prep session last weekend. So far we’ve eaten 2 breakfast dishes and 1 dinner dish that were fantastic!~ One critique: I have the brown rice casserole in the oven now – directions do not state to thaw first so I assumed I could cook from frozen- and after 25 minutes it is still frozen solid!!! I’m guessing it will take more like 1hr to cook. You may want to adjust the instructions. But overall I LOVE THIS WEBSITE :)
