I just noticed that you used two of my recipes this month! Thanks so much for featuring them!!!

I loved the Almost Mediterranean Jambalaya but I made the Asparagus and Ham Casserole last night and it was just so so. The parsley was weird and it needed more cheese and spices to make it less bland.

I love the idea of the Quesadilla recipe! We love quesadillas in this house and it’ll be great to switch it up a bit. Do you just let them cool, then freeze them? How would I go about reheating for dinner/lunch one day?

    • Tricia says:

Yes, you cook, cool and freeze. You can flash freeze as well (put them on cookie sheet and in freezer for 10 minutes or so. You can look at the printable recipe labels and recipe cards for reheating instructions.

For your April recipe of Chicken Quesadillas, the website indicates 4 servings with a WW PTs value of 5 per serving:
    http://motherrimmy.com/whoot-whoot-chicken-quesadilla-with-chipotle-and-lime-sour-cream

You downloadable recipe cards show 6 servings with a WW PPT value of 7!

I think the motherrimmy site may have the old WW PTs and not the new ones, however, I would think the serving size should be the same, right?

And you indicate packaging for 4 to freeze. Please clarify or correct the recipe cards. Thanks!

    • Tricia says:

Sorry for the delayed response, it took some time to go in and do some research. The answer is: The serving size was incorrect on the recipe cards but I’ve made the change to indicate 4 servings. Using the old WW points system the value is 5 points per serving but it’s 7 using the new Points Plus calculation. I will get that changed on the info as soon as I can.
