August is a busy month for many households.  Summer is beginning to wind down and kids are getting ready to go back to school.  This month, the Diet menu continues to keep baking to a minimum and including several meals that are easy to throw together on your OAMC big day that can be easily prepared in the slow cooker for serving day.  For breakfasts, things are kept light with pancakes and smoothies.  Lunches are light and easy to reheat and for dinner, there are several exciting choices.  The Petite Sante Fe Casserole Cups will be a likely hit and extra light dishes like Lemon Chicken with Broccoli and fish tacos are sure to please everyone.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Shanna Freeman –  I’m a freelance writer for both the Web and print, and mostly work at night while caring for my toddler during the day. I enjoy baking and cooking healthy, from-scratch meals, trying to balance my adventurous palate with the more pedestrian tastes of my family. You can find samples of my work at about.me/shannafreeman.
  • Angel Eicher – I am an at-home foodie on Weight Watchers.  It’s fun to make gourmet style meals and still enjoy the food while losing weight.  I have been working from home for the past 3 years so now need to make the transition to working outside of the home and still be able to cook good meals at home.

Get Started

    Love it!!! Husband deployed, new baby in the house…one day of cooking and yay no more dinners of peanut butter straight out of the jar =)

    This was my first month doing OAMC. First few days were a lot of work, but I’m so happy to have a freezer full of wonderful meals! We’ve already had the Lasagna Cups (I’m definitely keeping that recipe in our monthly rotation) and the Lemon Chicken (very good with brown rice). My kids even enjoyed the pancakes this morning! Thank you for doing all the hard work!

    I think there is a typo on the nutritional information on the Orange Terriyaki Kabobs- it says 2 enchiladas per serving… Oops… lol Thanks for a great menu this month. I’m compiling my list for Costco and then getting my freezer and myself ready to go back to school!

    Hi- everything looks great this month! I am so excited! I think, however, the balsamic glazed pork loin is not changing amounts in the google doc. Everything else changes perfectly- if you could just double check that one… thanks!

    I think there’s an error in the ground chicken amount? My shopping list says 2 lbs for four servings (which seems right), but the recipe card list/prep instructions say twice that much – 64 ounces.

      You can search our site under ‘Recipes’ for some sides and desserts that have been featured though they are not specifically part of monthly menu.

    The spinach burger recipe did not multiply for me. did I do something wrong?

      It likely contains a “formula” because there is an egg involved. It is okay, you will have enough burgers. It is okay to have checked about it though. :)

        It says it will only make 2 burgers though when there are three of us. Shouldn’t it make 6 burgers?

          Same as above it’s a formula because of an egg. You will have enough.

          I don’t mean to belabor this but I simply don’t understand how the exact same amounts for the recipe for 1 person for the spinach burgers, including, for example 20 ounces of spinach, also feeds three people when I type in 3 in the yellow box. The recipes are example the same… the amounts are exactly the same for everything for one person as for three people… and it says for three people that 2 burgers will be made. So three people are supposed to share 20 ounces of spinach making two burgers but one person also gets the 20 ounces of spinach and two burgers? I don’t understand the formula. The formula seems to be one-to-one in this case. There is no multiplying. I’m just not sure it’s worth it to me to make two burgers only. I truly appreciate all your work, but this just seems to not have multiplied in the case of the spinach burger recipe.

          Amy, I see where your confusion came in – it was in the yield box. This recipe, the way the formula is written actually makes 8 burgers whether you are making it for 1 person or up to 4 people. If you are making 5-8 servings it makes 16 burgers. I have changed the yield box to reflect that. We do formulas like this so that we don’t have a fraction of an egg. It does mean that you have extra burgers if you are in the smaller range of the serving sizes but seems to make more sense.

    Also, the chicken meatball recipe seemed to only double for me, when I entered 3 people for all. I’m afraid I’m doing something wrong. I’m new here and trying my first big cook day Saturday!

        Thank you all! I have my groceries and will chop tonight and cook tomorrow for my first try at this! Thank you for all this hard work organizing these menus! I have such a busy month ahead, it is a load off my mind to know I’ll have many easy meals!

    I’m a little confused…I don’t see the Orange Teriyaki Chicken on the instructions, but on the recipe card it says it should be made and frozen. And on this page (above) it says it is not made on the OAMC Big Day (tomorrow, for me). If someone could clarify, that would be so helpful. Thank you!!!

      We will update the instructions. The orange teriyaki chicken should be assembled as listed in the recipe cards but was accidentally left off the instructions.

    Hey there – this is my first time attempting the OAMC menu (in anticipation of surgery next month, which will leave me unable to cook for a while) In preparing the orange chicken kebabs, it does not say to cook the chicken, but I always thought it was unsafe to re-freeze thawed chicken? Can you clarify for me please? Thank you so much!
