We are a month into 2012, how are you doing in your commitment to eat healthier and to watch your waistline? We hope that this seasonal menu will help you achieve those goals without you having to spend all your time in the kitchen.

Facebook Fan Party:
OAMM Facebook Fan Page Party – Month February 12th 2012, 9:00 pm – 9:30 pm EST – We will be able to chat via video AND messaging during the event through FACEBOOK! How cool is that? We will be talking about the current month’s menus, answer your burning questions about freezer cooking and have fun getting to know one another. You can also see other past recordings from that tab as well. This is a great way to meet fellow Once A Month Mom’s or get your questions answered as you get started.

Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

- Katherine Rodman – As a grandmother and teacher at a local state college, my time is full. I love having my freezer full so I can spend time on family, freely serve last-minute needs of families in my community, and still have time to read or do art work and yard work.

I just finished my cooking. I loved it and can’t wait to enjoy all this food. There’s just one thing missing from your website – a dessert menu !

This is the first month I have done and I LOVED it! It has saved me sooo much time throughout the week!
I just finished my first OAMC month! I made my own menu of 3 breakfast options and 6 lunch options. Took me about 4 hours to do it all with my husband chopping and helping with cleaning throughout since we don’t have a lot of multiples.
Is there some type of list on here that I can print for what I have in the freezer? I thought I saw one when I was looking around but I can’t find anything now!

Finished cooking everything and went ahead in cooking the loaded potato soup in the crock pot. It tastes good, but the soup has separated, or maybe the word is curled. Has anyone had this problem before? What can i do differently?
You are more likely to have that problem if you used something other than Yukon Golds. And it can do that occasionally. If you have a hand blender it can work to blend it a bit.
I also just tried the loaded baked potato soup. I followed the directions to a tee and it did not turn out good. I was dissapointed! First, I was surprised by how little was there after I dumped it in the crockpot, and secondly, by the time it was done cooking (7 hours on low) there was no liquid left. It was just a pile of potatoes. :) It was also a little salty. Strange!

I just completed my first OAMC! It was great. I chopped and cooked int the same day. (mistake) Next time I will chop the day before. Thank you so much for the diet menus. I am looking forward to the next set. When will you have the March menu up?
Great! Menus always come out on the first except for mini menus that come out on the 5th and 10th.
Can someone help me out? I don’t think I’m doing anything wrong, but I’m seeing a recurring theme with my crockpot meals. by the end of cooking, there is almos no liquid left. This happened with the potato soup and now the chicken taco chili. suggestions
Adriane, my thought is that your crockpot is too large for the amount of food you are cooking. I have a larger crockpot and I use the crockpot liners and under the liner I put a ceramic bowl or something to make up some of the space so I get more even cooking.

I just tried the Waldorf Salad and would recommend, if did a freezer-prep again, that the apples be added when serving. Nuts and chicken and grapes and onions were all good to go. But, the softness of the apples put us off to the dish. Too bad.
I was so disappointed with the loaded potato soup. I followed the instructions, but my potatoes turned completely black and nasty. Definitely not something I’m going to feed my family!
Well sorry to hear that. You do have to make sure that they are in water prior to preparing. It also helps to use Yukon Golds but I have never had that happen to a soup. Did you wait awhile before freezing the soup?
