This month, it’s another menu full of lighter, healthier meals to keep you on track as summer is in full swing.  Baked meals are kept to a minimum and grilling options are still running strong.  For breakfast, we take advantage of blueberries which are abundant in July, with both Tri-Berry Yogurt Pops and Blueberry Granola bars.   For lunches, try Zucchini and Corn Quesadillas or Shredded Chicken BBQ.  Dinners provide many options from Raspberry Glazed Pork Chops to Jambalaya and Thai-Inspired Chicken Wraps.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Kaytee Wieking - Kaytee is a 35 year old mom of two that works part-time as a NICU RN.  She is always looking for a way to serve delicious nutritious dinners to her kids, especially after a busy day at work!
  • Erica Rawson - Erica is from northwest New Mexico.  Married 14 years with four lovely children.  Her daughters are 10 & 8.  Her sons are 2 & 1.  They homeschool.  They love to spend their family time outdoors (mountains are about 30 minutes away).  They are working towards a whole foods diet.  She has been freezer cooking for about 12 years and find it a great way to get dinner on the table even among homeschooling, raising little ones, sports & church schedules & everyday crazyness.  She coordinates a MOPS (Mothers of Preschoolers) group & it’s always nice to have frozen meals on hand for new moms, moms with sick babies, etc.

Get Started

Are you new to Once A Month Mom or once a month cooking (oamc) in general? If so, you might want to spend a few minutes (or hours) on the Get Started Series. If you are in a real hurry to catch on we have written some simple steps for getting started. Welcome!

    I made the pasta primavera and subbed chicken broth for the milk since its hard for me to digest. Very tasty! I had a much healthier dinner because of you all!

    I am a first timer this month. I love this idea. I have tried the blueberry granola bars but mine turned out more like granola :) I’m sure it was due to operator error. It was still really good though. And, I used fat free yogurt in the pasta primavera which didn’t get very creamy. But again, still tasty. Thanks so much!!!

      Did you use the applesauce in the granola bars and pack the mixture into the pan before baking? Also, what serving size were you using? We received another report of them not staying but my batch held together following the recipe as is listed on the recipe cards. I hope you still enjoyed though!

        I did use the applesauce. I used a serving for 4. I probably didn’t pack it down hard enough because I was worried about squishing the blueberries. It was still very tasty though. Great sprinkled on some plain yogurt! Thanks!

          I also had trouble with mine turning out more like granola when I tried to get them out of the pan. Glad to know I’m not the only one.

          What I ended up doing is putting them in bags and serving them with milk similar to cereal. My kids loved them.

    I may be incorrect, but I think the grocery list is missing the large whole wheat flour tortillas for the Thai Chicken wraps.

      You are correct. We will get that updated. The grocery list only included the tortillas for the quesadillas and not the wraps.

    So excited to start this adventure. I am trying the June recipes this time but look forward to many more. Love and thanks for all your efforts! I have tried this on my own but to have it all ready and loaded in one place is wonderful.

    A the instructions for the zucchini and corn quesadillas correct? When I enter “4″ for the number of servings it tells me I need 12 cups of sliced zucchini but only 2 cups of corn. That seems like an a lot of zucchini! Thanks!

    First time ever cooking in mass. A friend and I cooked together multiplying the recipes by six. Results are phenomenal. We have loved everything thus far. Evenings with my family have been stress free. Thank you, Thank You, Thank you. I can not wait to try the August menu! I took lots of pictures of the big day on Facebook and tried to tag once a month mom in the pictures with no luck. Maybe u have suggestions for sharing pictures of the meals with future cooks. :)

    I am so excited to try these. Thanks for all the varieties of meals. I have a daughter who needs gluten/dairy free. Thank you for all the work you have done to make this a wonderful resource for those of us who don’t have time to scour the internet or know what will freeze will or not.

    Great meals! One question, for the blueberry granola bars, how many bars do you get from 1 8×8 pan? I’m cooking for 4 and I’m not sure if I need to split the recipe between two pans or not.

      Serving size of 4 will be more than the original recipe but you should be able to still use one 8×8 pan to bake and divide into 12 bars.
