Diet November 2011 OAMM Menu (OAMC, Freezer Cooking, Bulk Cooking, Power Cooking)

November has finally brought about some much cooler weather here in North Dakota, and with that comes a lot of really good cold-weather comfort foods, like stuffed pork chops, baked ziti, and my favorite–broccoli cheddar soup.

Pumpkin Pie Smoothie - a healthy "indulgent" treat for fall!

I know that this time of year is one of the hardest in terms of staying with a diet, so it is my hope that our November 2011 Diet Menu will provide you with delicious, diet-friendly meals to help feed you and your family. The last thing we want to do is feel deprived around the holidays, when those around us are indulging in tempting treats…so I have included some lighter versions of holiday and snack-time favorites, such as pumpkin pie smoothies and buffalo chicken sweet potato skins, to make it feel like we’re indulging without all the calories and guilt! These customized labels are designed specifically for the DIET November 2011 Once A Month Mom Menu. They contain the name of the dish, serving instructions for preparing the dish on your serving day, nutritional information AND Weight Watchers Points. They make preparation of the dishes hassle free and staying to your eating plan a cinch.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

    Test Cooks

      Excited to try this menu this month Jimmie!

      Quick question on the pumpkin pie smoothie. Your original recipe lists the nutrition information for one serving using 1 cup of pumpkin. However, the recipe cards use 1 cup of pumpkin for 2 servings with the same nutrition. Which is correct?

      Hi, I was looking through some of the recipes but I couldn’t find serving sizes. Do you have the serving sizes for the baked ziti and the broccoli soup?

        Hi Heather,
        The baked ziti should be about a 1-cup serving (or 1/6 of a 13×9 pan). The soup should also be a 1-cup serving. Thanks!

      I am confused about how much a serving is. I read a post from someone that said to look at the recipe cards, but I can’t figure out how to tell what the finished product will come out as (1 cup as one serving, etc). Can you help?

        Each recipe will yield (at least) 2 servings of that recipe for every 1 serving you put into the recipe cards. 1 in yellow box = 2 servings; 2 in yellow box = 4 servings, etc. You are meant to eat that particular item at least 2x during the month. The first page (tab) of the recipe cards where you enter the number in the yellow box has some detials.

      When I go to the printable recipe cards, I change it to excel in order to change the number of people, but then when I print, it doesnt print out all the instructions (it doesnt print what is hidden).

      I went to my google docs instead of excel and was able to follow the instructions from there. That was very easy once I did that!

      So far we had the baked ziti, breakfast sandwiches, butternut squash pizzas and buffalo chicken sweet potatos and all were hits! But let me tell you, tonight I made my double batch of the black bean/chipotle/pumpkin soup and it blew my mind! DELICIOUS! Thank you!!!

      This food is amazing! I bought all of the ingredients at once and have been cooking while the baby is napping or if daddy will watch him. Its taken me about 5 days but Im not cooking anymore than I usually do! I usually pick complicated recipes with lots of prep, thinking they are better, but these recipes are so simple and are absolutely delish! Thanks so much!

      I had skipped this month in November and ended up making it this month. Everything I’ve made so far is pretty tasty. The black bean pumpkin soup was delicious. My only complaint was my list didn’t say (and I didn’t realize it) how many or how thick the pork chops should be. We ended up not stuffing them cause the ones we bought were too thin. Live and learn.

      Also I thought the buffalo chicken sweet potato skins sounded complicated but it really wasn’t. The only down side is I can’t stop eating them…So good.

      Hi, I am planning to make the cranberry-balsamic turkey tenderloin but I have been to two stores and have been unable to find turkey tenderloin (nor does anyone seem to know what I am talking about). Any suggestions for a different cut of turkey or a different meat I could substitute? Thanks!

        I imagine that a turkey breast would be comparable. Any readers have suggestions?

        Turkey tenderloins are usually in the Jennie-O section of the meats, but are pretty rare and can be found in more big box stores. You can always ask the butcher or manager if it’s something they can get in for you. However for this recipe I would sub pork tenderloin. That is more readily available.
