Diet September 2011 OAMM Menu (OAMC, Freezer Cooking, Bulk Cooking, Power Cooking)
It has been a bit of a crazy season around these parts for the Diet menu. My apologies. After doing the menu for over 6 months, our regular diet writer, Christine, decided to take a break. I was confident that we could fill her shoes by the end of the Summer 2011 menu but it seems that the summer just slipped right through our fingers (and she has some tough shoes to fill). Don’t fret, it appears that I have a great writer coming on board soon. However, in the meantime I have had to fill in for the Diet writer. And it isn’t my strength.

Needless to say, the other writers have come to my aid and I think that we have pulled together a good September menu for you! I hope that you enjoy it and we look forward to more great things from this menu as we welcome in the fall.

Sample Label
These customized labels are designed specifically for the DIET September 2011 Once A Month Mom Menu. They contain the name of the dish, serving instructions for preparing the dish on your serving day, nutritional information AND Weight Watchers Points. They make preparation of the dishes hassle free and staying to your eating plan a cinch.
These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

This is my first time giving this cooking in one day a go. I’ve begun to buy the food for the September menu. I noticed that cocoa is missing from the grocery list!
Also, I’m cooking for 4 portions. In the tuna recipe it says to use 28 ounces of tuna. The written directions say to form 3 patties??? I would think that is one massage sized pattie… does this mean I should make 6 instead or 8??

We had these menus test cooked but there ALWAYS seems to be some things that fall through the cracks. It is hard to get everything. I will take a look at the grocery list and add the cocoa and the directions should have been adjusted on that tuna patties to reflect the changing numbers, I will look at that too. For your purposes you will get 2 patties for every 4 servings – that means you will be making 8 patties.
Oh I just found that the canned crabmeat is not on the shopping list either. Also- I’m thinking I might buy a small carton of egg whites instead of a dozen eggs (used for the egg and ham turnovers) and only using the whites.
Nice call on replacing the cream with yogurt/sour cream on the stroganoff! That is one of my favorites but I always feel so guilty making it…
My only problem with your site is deciding which menu to use! I looked at the traditional and whole foods and decided to go with whole foods. I have everything all printed out and ready to go and now I just looked at the diet menu. It looks great too!
How does everyone decide which menu to follow? I may have to limit myself to a rotation of menus!

I noticed the chicken sausage for the autumn casserole didn’t show up on my grocery list.
Also, spinach shows up in the (fresh) produce section of the grocery list, but the only place I can find it in the recipes is in the spinach lasagna rolls, which calls for frozen spinach. Since I just bought a huge package of fresh spinach leaves, do you think it will be a problem to chop and use fresh, instead of frozen?
I will check on this but yes, you can use fresh spinach in place of frozen.

I used regular chicken for the Autumn casserole but I think it would taste better (we ate it tonight) with chicken sausage. Due to the high amount of rice, the chicken was a bit bland.
I noticed that none of the recipes have a ** indicating no cooking on the big day, does that mean that all of these require some form of cooking? Also, anyone else that has done this menu already, how long did it take you? Was it just you or with a team member, etc?
I think that most of them at least require chicken or beef to cook for these recipes. I may need to go back and double check. I believe that most are reporting between 6-8 hours for this menu.
I am wondering how much pizza dough (how many pizzas worth of a regular recipe you would need to do the turnovers (I think that’s the one that needs the frozen pizza dough). None of my local stores have the frozen dough, and I don’t want to make too little to finish it up.

I felt unorganized trying to make this month’s Diet recipes. But, this is the first time I have tried the diet version. The whole food version last month went without a hitch. Is this month’s diet version an anomaly or something that is normal? I had to make half a dozen trips bake to the store after shopping for my “day”, making the cooking go much longer than anticipated. That being said, the turnovers and the skinny pizza rolls have been a huge hit!
Erin, I’m sorry to hear that you had trouble. Can you be more specific about what the issues were so we can look into them further?
I guess missing ingredients on the grocery list. I made the seafood casserole and it made twice the amount listed (not a bad thing…just need more 8×8 pans). I chopped the amount of celery the chopping guide said I needed and the seafood casserole alone needed more than twice what I chopped.
So really little things…things I could’ve gone through each recipe and double checked. I assumed that work was done for me when downloading the recipe cards, grocery list and instructions. I don’t want to complain about it because all the work you guys do is provided free for us :-) So should I go through the recipes and grocery list to confirm everything before doing the cooking day? I did not have any issues with the previous menu plan is why I pose this question (not because I am upset by any means!!)
Erin, no problem and no we don’t want you to have to double check! I will go through the cards and see if there was a formula error. The documents do go through test cooks who normally catch these things for us, but sometimes things happen! Thank you for pointing these out!
This was our first time using your menus and plans. The pizza rolls were super easy to make. I don’t think we’ll ever have to buy them again. I love the muffins, probably too much. I used Ghirardelli choc. chips instead of minis and they turned out addictive. I am glad you suggested what to do first and what to prep. I just wish we had a list of kitchen tools needed beforehand. Unless there is one and I missed it. Also I didn’t have time to do it all in one day. We ended up spreading it out a few days.
