What are Mini Menus? Mini menus are a fraction of the meals you would see on a normal menu and can be completed quickly and efficiently in a few short hours, in the evenings when you are preparing the meal for dinner or during small bursts of times like naps. Mini meal plans are designed for the busy family who wants freezer meals in their freezer but doesn’t have time to do a full months worth of meals. If you are new and not sure how to get started we have a wonderful series starting with 5 easy steps to get you on your way to once a month cooking. Good luck! If you like (or don’t like) this menu you might want to check out all our past mini menus or in-season menus –   January 2012′s menus if you are looking for something different!

The labels link takes you to the directions download not the labels. I can’t figue out how to get to the labels.

I assembled all the meals today (except Cheesy Potatoes & Ham). I am really looking forward to trying the Sicilian Meatloaf, it looks really good. I had a hard time getting it to roll up, I wish I had a video of me wrestling with a meatloaf, it would have been amusing. :)
Thanks for the recipes! This will go a long way to keeping our family out of a dinner rut.

We will work on a platform for videos of members wresting their food! It might be a Youtube sensation. ;) I hope it tastes worthy enough of being wrestled.

I am new to this, and was wondering, if I want 10 meals for a family of four, I put 8 in the yellow box right? If I only put four, then I will only make 5 meals? When I put 8 in, it says I need four containers to store, so am I essentially quadrupaling? My family doens’t eat a ton at meals, so are the meals figured assuming people might have seconds, and two containers = one meal?
    Thanks!

These types of questions always make my head hurt because they remind me of high school word problems, don’t they? If you look at the first page of the recipe cards it explains a little. A mini menu is 5 recipes that yield you 10 meals. Putting in a 4 to the box will yield you 10 meals for 4 people or 40 servings. You don’t need to do math here. Just put in the servings you want and cook. Be careful not to overthink it. :)

Thank you! that is what I figured! so the number of bags to save it in doesn’t necessarily mean “4 meals”
thanks so much! I went ahead and cooked them before getting your answer. Husband loved the pecan chicken!
