Easy Freezable Banana Bread Recipe
Banana bread–classic comfort food. Everyone has a favorite recipe, and mine comes from my grandma who won blue ribbons at the county fair with this bread. I don’t make it as often as I’d like because my kids usually scarf up bananas before they have a chance to go ripe. But on the rare occasion that I can hide a few, or even find over ripe manager’s specials, I like to freeze bananas so I can make yummy banana baked goods any time the craving hits.

Ingredients:
- 1 cup sugar
- 0.5 cup butter
- 3 teaspoons baking powder
- 2 cups flour
- 0.5 teaspoon salt
- 2 eggs
- 1.5 cups mashed ripe banana
- 1 Tablespoon lemon juice
- 1 cup chopped nuts (optional)
Directions:
Cream sugar and butter. Add eggs, one at a time, beating well after each addition. Stir in mashed banana and lemon juice. Add flour, baking powder, and salt. Fold in nuts, if using. Pour in a large greased loaf pan. Bake at 350F for about one hour or until knife inserted in center comes clean. Cool on a wire rack.
Freezing Directions:
Prepare as above. After baking, allow to cool. Wrap in foil and place in a freezer bag. Seal, label, and freeze.
Servings: 1 large loaf

This is one of the best banana breads we have tried. We ate the entire loaf in a day. In fact, I’m baking another loaf for breakfast tomorrow morning!
