Easy Freezable Chicken and Biscuits
Chicken and veggie stew topped with biscuits. Can a meal get any more comforting? Serve this one-dish casserole as-is, with a simple green salad, or a bowl of warm cinnamon applesauce, and you’ve got dinner. Pass the napkins, please.

Ingredients:
- 2 cups cooked, chopped chicken
- 2 cups cubed frozen hashbrowns
- 12 ounces frozen mixed vegetables
- 10.75 ounces cream of chicken soup
- 1 teaspoon garlic powder
- salt and pepper to taste
- 1 can refrigerated biscuits
Directions:
In a bowl, mix chicken, potatoes, veggies, soup, and seasonings. Place in deep 8×8 baking dish. Arrange biscuits on top of casserole. Bake covered with foil at 375 degrees for 45 minutes. Remove foil and continue baking for another 10-15 minutes or until biscuits are cooked and golden brown.
Freezing Directions:
In a bowl, mix chicken, potatoes, veggies, soup, and seasonings. Place in deep 8×8 baking dish. Arrange biscuits on top of casserole. Cover with foil, label, and freeze. To serve: Do NOT thaw. Bake covered with foil at 375 degrees for 1 hour. Remove foil and continue baking for another 20 minutes or until biscuits are cooked and golden brown.

How do you get your biscuits to cook all the way through? Every recipe I’ve tried like this one I pull the casserole out of the oven and the top of the biscuit is perfect and golden brown and the part that touches the filling is still doughy and completely raw. Please tell me your secret, I would love to put this recipe on my list!!
There are two things that you can try. One being, the foil method indicated. The other being that you could wait and just add the biscuits after you freeze/thaw the dish.
I had the same question as Jessica…but you’ve solved the dilemma!!!
I made it today. I doubled it and made a 9 x 13 pan. The only thing I would change is to add a little milk or heavy cream to it, mine was a little dry. The biscuits turned out perfect

I’ve made dishes similar to this and cut the biscuits in half (so they are only half as thick). My biscuits seem to cook all the way through that way.

I made this 2 batches of this today. I am freezing them without the biscuits. I plan to add biscuits when I bake it. Would you suggest I thaw before I add the biscuits and bake or just add the biscuits on top without thawing first and baking?

This was ok for us. I like chicken casserole better. It just seemed to doughy and fatty I guess lol It was good my little one ate it up, and my husband didn’t complain. It just did wow me. I’ll keep it for a cold rainy day though :D
I make something similar from the one of the Barefoot Contessa cookbooks. It’s D-Lish! I use the Pillsbury frozen biscuits instead of the refrigerated ones in the tubes. They taste more like homemade.
