Edamame Fried Rice

Whenever I cook rice I always seem to end up with too much, leaving me with a big container full of leftovers. This dish actually tastes better with leftover rice and has quickly become one of my favorite “clean out the fridge” recipes, since you can also throw in whatever vegetables you have. Edamame Fried Rice can be served as a side dish to your favorite protein (I love pairing it with tofu) or as a main dish.

Edamame Fried Rice

Ingredients:

  • 2 medium eggs
  • 2 Tablespoons coconut oil
  • 0.5 medium onion, chopped
  • 2 medium carrots, chopped
  • 0.75 cup edamame
  • 1 teaspoon vegetarian fish sauce
  • 1 Tablespoon soy sauce
  • 0.5 teaspoon ginger
  • 1.33 cups brown rice, preferably prepared the night before

Directions:

Scramble the eggs and then set aside. Heat coconut oil in a medium skillet over medium-high heat. Add onions and carrots and cook until onions are translucent, about 5 minutes. Add edamame, fish sauce, soy sauce, ginger, and brown rice. Cook for 5 more minutes. Add eggs and cook for 1-2 more minutes. Remove from heat. Serve.

Freezing Directions:

Allow to cool. Place in a gallon freezer bag, label, and freeze. TO SERVE: Thaw. Heat in microwave or on stovetop, adding a bit of water, as needed.

    Hi Ya’ll,

    what can you use instead of Fish Sauce or is it possible to not use it?
    Its not something i have in my pantry since i wouldnt use it on a regular basis.
