Fall Vegetable Mashers: (4+ months)

One of the first foods I ever made for Shep was mashed sweet potatoes. He would finish two cubes and then bang on his tray for more! Below is the very simple recipe I made him, plus squash for a little Autumn-ness.

Yield:

2 ice cube trays/ 32 oz/ 64 T

Ingredients:

  • 1 large butternut squash
  • 2 medium yams or sweet potatoes
  • 1 T brown sugar
  • 2 oz. formula or breast milk

Directions:

  1. Preheat oven to 400 F
  2. Wash outside of squash and yams
  3. Cut the squash in half and poke holes in the yams (so steam can escape without exploding the yam.)
  4. Dig out all the guck in the squash (save seeds if you want- can be roasted.)
  5. Place squash (meat sides up) into a pan. Pour about an inch or two of water around the outside of the squash (helps with cooking.)
  6. Place pan in oven, and put yams directly on rack on either side of the pan.
  7. Cook for one hour until meat of squash is tender.
  8. Remove from oven and allow the veggies to cool before you handle them.
  9. Scrape squash and yam flesh into a large mixing bowl.
  10. Add brown sugar and formula.
  11. Hand mash with a potato masher until desired consistency. (This can also be done in a food processor or food mill for a finer mash.)

*You can ice cube tray this up to 4-6 months, but if your baby is anything like Shep, it will probably last only a couple weeks!
