Favorite Casserole

Growing up, this was my “favorite” casserole..hence the catchy name! Open your pantry door, you probably have all the ingredients on your shelf, just waiting to be put in a yummy dish! It is such a simple, easy and quick meal to throw together, that incorporates 3 foods groups in one dish.
Favorite Casserole

Ingredients:
- 1 lb ground beef, browned
- 10 oz cream of mushroom soup
- 15 oz cut green beans, drained
- 1.5 cups cooked white rice
- salt and pepper to taste
Directions:
If you haven’t done so already, brown ground beef. Drain and place in a large bowl. Add cream of mushroom soup, green beans, and rice. Pour mixture into a greased 2 qt casserole dish. Bake 350 degrees for 30 minutes OR place in a large microwave safe bowl and microwave 5-7 minutes, stirring every 2 minutes until warmed through.
Freezing Directions:
After combining ingredients, pour into a gallon freezer bag. Label and freeze up to 3 months. TO SERVE: Thaw. Pour casserole mixture into a greased 2 qt casserole dish. Bake 350 degrees for 30 minutes OR place in a large microwave safe bowl and microwave 5-7 minutes, stirring every 2 minutes until warmed through.

My mom used to make this when I was growing up and I LOVED it! I make it for my family now (they don’t love it as much as I do, but too bad!) I never mix my rice in, I just put the hamburger mixture on top and then I add a little soy sauce over top. :) I think I’m going to make this for dinner tonight now!!!!

I just wish I could serve it to all three of my kids. My one will flip out if any of his food is mixed together. Wonder if I could still make this for the rest of the family and just set a small amount of each of the (cooked) ingredients aside for him. Hmmm…
I remember a very similar recipe using sliced or cubed potatoes instead of rice. Yum!
This was called “favorite casserole” in our house too (even though it wasn’t anyone’s favorite. That must come from grandma since it was called the same thing in both our houses ;)
This is something similar to what I make but I don’t use rice and I put tator tots on the top. I have make this in the crock pot for an easy potluck meal, or a lazt Sunday afternoon meal. :) I will definitely print this & try it with the rice. Thanks!!
