Happy Blogiversary! Yes, today marks the one year anniversary of the start of this blog. I can hardly believe it has been a whole year. In celebration of the blogiversary I have some exciting contests that will be taking place all month long. Stay tuned later today (2/1/10) for details on how you can participate.

Also, since it has been one year that means if you don’t like this years’ February menu, you can always go back to last years and consider that menu.

I also reviewed two cookbooks during my “maternity leave” and didn’t have a chance to put recipes from them on the menu as we were in the middle of the all stars menus. So this month you will see recipes from my reviews of Mad Hungry and The $5 Dinner Mom Cookbooks.

I kept in mind sale items, of course. I hope you enjoy these meals as much as our early readers/cooks have. If you are new and not sure how to get started, read here. For frequently asked questions visit here. And there are several other helpful links under the Helpful Hints/Resources section to help you on your cooking journey. Good luck!

These customized labels are designed specifically for the February 2010 Once A Month Mom Menu. They contain not only the name of the dish but also the serving instructions for preparing the dish on your serving day. They make preparation of the dishes hassle free.

These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

    I finally got back to the gluten and dairy free adaptions after not posting for the past couple of months. The breakfast and lunch adaptions are up for the Feb 2010 menu.

    I like the idea, but all of your recipes are very heavy on dairy and meat – and my family just doesn’t eat that much of those! Maybe this idea will motivate me to get going on the types of foods we DO eat.

    I’ve been so excited about this month’s menu, I got hubby in on it too! He actually had a great suggestion for anyone who might want to try it – for the Pork Roast with Apples and Pears, he suggested using a beer instead of apple juice for the liquid. A lighter beer like an IPA or a Belgian White would go really good with the fruit and add a little kick to the pork. Not everyone does alcohol but it’s an alternative for those that might be interested!

    This is a nice idea. I am actualy doing a Meatless march so maybe I will share my recipes. I don’t know if I will cook all of my meals ahead of time, but maybe I could give it a try!! It sure would make the work week easier. The only thing with the Feb. recipes given is that we eat more of a variety for dinner. 8 dinner recipes would only last us 2 weeks, probably less. My husband isn’t big on leftovers either.

    I have been following your website since last summer- I am addicted to OAMC now! Thanks for all of your hard work. I was wondering about the ranch chicken pizza kits- I have read that both tomatoes and green onions shouldn’t be frozen. Have you found that they come out OK? Thanks!

      We are about to find out! I like to push the envelope in terms of recipes and menu items. I try recipes alongside everyone else. They looked good going into the freezer today!

      Every summer I freeze fresh tomatoes from my garden. I peel, chop and then bag up in 2 cup portions so that it’s about the same amount as a 14.5 ounce can. The texture is mushier than fresh, but the taste is like a fresh tomato.

      I made the pizza kits with some changes. DH smoked a turkey, so I used that instead of chicken. I used canned tomatoes instead of fresh. I omitted the onion because DH doesn’t like them. The pizza tasted good, but I think they would have been better with the green onion.

      Most of the time I don’t test the recipes before creating the menu. The reason being that I am trying to purchase the items for my family while they are on sale that same month as readers. The hope is that we can all learn together.

    We just finished up our February cook-a-thon — yea, in March, don’t tell anyone — and the item we can’t keep our hands off of is definitely the pancake cupcakes. These are great! We didn’t use bisquick, we followed a recipe for bisquick substitute, which I think yielded even better results than we might’ve gotten otherwise.

    I printed the instructions and did my oamc this past saturday. Somehow 5Lbs of chicken did not yield 15 cups for the curried chicken tidbits. Was there a typo, or did I do something wrong?

      Sometimes yields are a bit off. It is hard to say whether it was you or the chicken. I had enough and haven’t heard anyone else mention it though. Anyone?

        The grocery list says 9.5 lbs of chicken but the direction sheet only says to cook 5 pounds of it for the chicken pizza, curried chicken and black bean salsa chicken. Planning to cook the feb menu this Saturday but I think common sense says 5 lbs of chicken won’t create 16 cups for the curried chicken and 4 “each” for the chicken pizza, and the direction sheet says 4.5 pounds of this 5 pounds of chicken should be used for the black bean salsa chicken. I was wondering how people ended up cooking the 9lbs of chicken.

          It worked out right in our case doing it as the directions suggested. I was a bit skeptical myself. You can always cook extra chicken if you are concerned. It might not be exactly the right amount? Any other feedback from readers that did the menu? You can always use less in the curried chicken too, because once the chicken is cooked the yields change a bit.

    Did anyone else have an issue with the dressing for the Chicken Ranch Pizza? My toppings were ok but the ranch dressing TOTALLY separated. I shook the bag a lot and it recombined a bit, but it definitely wasn’t the same as before it was frozen, the oil never fully combined. I’d suggest leaving it out of the freezer and just having the bottle of dressing handy for when you make the dish (like the cream cheese for the Black Bean Salsa Chicken)

      I just saved the dressing out myself. Figured it saved a freezer bag! And thanks for the reminder that I need cream cheese to make the Black Bean Salsa Chicken, I have it out thawing to make tomorrow!

    For the banana pancakes it says that it makes 16-20 servings. What do you consider a serving? Does it make 16-20 pancakes or more than that? I have a very large family so I have to alter the recipes a bit to make more of what I need. Just trying to get it all figured out. :)

      It is really hard to say because it depends on how big you make the pancakes. I usually assume 2 medium size(ish) when figuring servings. But they are approximate.
