Yes, using regular rice instead of instant is probably a problem, it would need some adaptions but we understand. Thanks for the feedback.

I know this has been mentioned but bears repeating: for the chicken and rice pilaf my rice did not cook up in 1hr 15 minutes. The chicken was perfectly cooked and moist but the rice was hard and crunchy. I did use "real" brown rice that takes an hour on the stovetop (it's more nutritious than minute rice) so I won't be making this again. But the rest of your recipes have been great!! Thanks!

The other night I was really wanting to make the breakfast burritos. I decided I wanted to try making homemade tortillas to use with them. The tortillas ended up being very stiff and hard to roll. I didn't want to waste the sausage, egg, cheese mixture so I ended up freezing it in muffin tins over night. I wasn't sure how they would turn out.
The next morning I soaked the muffin tins in a little warm water and the sausage/egg mixture popped right out. I put those in ziploc bags and pull one out each night. The past few mornings I put a sausage/egg muffin on my homemade stiff tortilla and microwave for 45 seconds. I fold my tortilla in half and eat it more like a taco. These are delicious!!

I just made the Banana Sour cream muffins....WOW are they yummy!!! I did large muffins instead of small ones, and it took them about 25 minutes in my oven to bake. We had them for breakfast this morning and froze the rest, but I could eat them all!!! I did end up with a lot of the cinnamon/sugar mix for dusting the pans, so I kept the leftover in a container for use on french toast or cinnamon toast when I want a quick breakfast or snack!

I'm going to try the February menu for the month of April, since I am currently stocked up on most of the ingredients. This is very organized and I am really looking forward to trying this! :)

For the breakfast burritos, when do you add the cheese? Do you cook it in with the eggs and sausage? Or sprinkle it on top of the egg/sausage mixture when you are actually assembling the burrito? Thanks!

Is it just me, or is this website really difficult to read because of the very small font size? I'm not even over 40 so I can't be the only one having an issue! I'm very interested in the site and I hope you will make some adjustments for easier reading!
