Fluffy Whole Wheat Pancakes
One night a week my husband comes home from work a little early and takes over dinner and kiddo bath-time so I can work on my blogging responsibilities. Some nights he brings home a pizza or makes something kid-friendly like macaroni and cheese, but most of my work nights are reserved for daddy’s pancakes!
This whole wheat recipe is our family’s favorite homemade pancake batter. It has the hearty, nutty flavor of the whole wheat, but unlike many wheat pancakes I’ve tried, are light and fluffy. Top with fruit or syrup, or even throw in a few chocolate chips for a scrumptious breakfast–or dinner!
Fluffy Whole Wheat Pancakes

Ingredients:
- 1.5 cups whole wheat flour
- 1 Tablespoon baking powder
- 0.75 teaspoon salt
- 3 Tablespoons brown sugar
- 2 eggs
- 1.5 cups milk
- 3 Tablespoons oil or melted butter
Directions:
Combine dry ingredients. Beat in eggs, milk, and oil with a whisk or mixer. Heat a nonstick griddle or skillet to medium heat. Spray with cooking spray or coat with a little butter. Pour on pancake batter, about 0.25 cup per pancake. When bubbles form and edges are set, flip. Serve warm, or freeze, as directed below.
Freezing Directions:
Let cooked pancakes cool. Flash freeze in a single layer and then place pancakes in a freezer bag or container. To serve: Reheat in a microwave or toaster until heated through.

We absolutely LOVE these pancakes!! We make them fresh every Saturday. We tried a similar recipe from one of my cookbooks and it just wasn’t the same.
