Freezable Sides: Pickled Beets

This is one of my favorite holiday sides from my mother’s family gatherings. I’m one of a few that like them so I usually end up making them. I received some fresh beets in my Happy Box last week so I decided to double this recipe and add the fresh beets.

Ingredients:

  • 15    ounces canned beets
  • 0.125    teaspoons cloves
  • 0.25    cups vinegar
  • 0.25    cups sugar
  • 0.25    teaspoons cinnamon

Directions:

Save the drained juice from the can of beets an place it in a small saucepan. Add remaining ingredients, except beets and bring to a boil. Pour boiled liquid over beets. Chill for several hours.

(I doubled this recipe and used fresh beets. If using fresh beets, you should cook them first)

Freezing Directions:

Leave at least 1/2 inch head space in the storage container and freeze. Thaw when ready to serve.

    I wish this had been posted 24 hours earlier! I got beets in my CSA box this week and had no idea what to do with them, lol. Our CSA provides recipes for us and they gave us a Greek Salad recipe, but you can only put so many beets on a salad. Thanks for the recipe though; if I get more next week, I’ll have to try it!
