Freezer Friendly Beefy Hashbrown Pizza

This tasty combination is reminiscent of Cheesy Potatoes and Sloppy Joes all in one.  With a cheesy hash brown crust, topped with shredded cheese, followed by a thick and meaty sauce, and more cheese, who can resist? Leftovers can be cut into squares, flash frozen, and placed in a freezer storage bag for a quick reheat for lunch as well.

Beefy Hashbrown Pizza

Ingredients:

  • 24 oz southern style hash browns, frozen
  • 10 oz condensed cheddar soup
  • 2 eggs, lightly beaten
  • 2 lbs ground beef, browned
  • 1 whole onion, chopped
  • 26.5 oz spaghetti sauce
  • 2 cups colby jack cheese, shredded #1
  • 2 cups colby jack cheese, shredded #2
  • 0.5 tsp salt
  • 0.5 tsp pepper

Directions:

Preheat oven to 400F. In a large bowl, combine hashbrowns, soup, eggs, salt and pepper. Spread on a greased jelly roll pan. Bake 20-25 minutes or until lightly browned. Meanwhile combine beef, onion, and spaghetti sauce. When “crust” is done baking, remove from oven and sprinkle with cheese #1. Spread beef mixture on top and then sprinkle with remaining cheese #2. Bake 10 more minutes or until cheese is melted. Let sit a few minutes before serving.

Freezing Directions:

Divide hashbrowns, soup, eggs, salt and pepper into a gallon freezer bag and set aside. In a large bowl, combine beef, onion, and spaghetti sauce place in quart freezer bag. Put cheese in a quart freezer bag. Place bag of beef mix and bag of cheese inside bag of hash brown mix. Label and freeze for up to 3 months. TO SERVE: Thaw, removing the two smaller bags from the larger when thawing. Preheat oven to 400F. Spread hash brown mixture on a greased jelly roll pan. Bake 20-25 minutes or until lightly browned. When “crust” is done baking, remove from oven and sprinkle with #1 cheese. Spread beef mixture on top and then sprinkle with remaining #2 cheese. Bake 10 more minutes or until cheese is melted. Let sit a few minutes before servings.

Servings: 12 pieces of pizza

    Is there something else that can be used in place of the cream soup? I haven’t seen a cheese soup that is gluten-free. Would sour cream work? (not freezing).

      Sasha-
      I haven’t seen a GF Cheddar Soup either. I would suggest using a cream of chicken GF soup option and add a little shredded cheese or the sour cream option might work well too! Let us know how it turns out!

  2. What are “southern style” hashbrowns? Are they just regular shredded? Or more like tots?

      Amy – Southern Style are the tiny little square hash browns…..they should be in with the other potato varieties in your grocers’ freezer aisle.

    Divide among indicated number of gallon freezer bags and set aside, what are the number of freezer bags?
    And would microwave or use the oven with the slices if they were cooked & frozed?

      Yea, that read awkwardly and the writer hadn’t adapted from the recipe card to the post. I have changed it so that it reflects what you should do if you are just making this one recipe.
