This recipe was sent to me by a former co-worker and reader who responded to my call for Thanksgiving Appetizers a few months back. It is different then the Thanksgiving mashed potatoes and uses the oven to bake them on your serving day. I thought this might be more plausible at Christmas when there is seemingly “less” food being put in the oven than at Thanksgiving.

Ingredients:
- 5 pounds Yukon Gold potatoes, peeled & quartered
- 4 ounces cream cheese, softened
- 4 ounces sour cream
- 1 teaspoons salt
- 1 teaspoons onion salt
- 0.25 teaspoons pepper
- 2 Tablespoons butter
Directions:
Peel potatoes. Place potatoes in a crock pot. Add water until potatoes are covered. Cook on LOW 7 hours or on HIGH 4 hours – a fork can easily be poked through them. Mash until smooth. Add remaining ingredients, beat until fluffy. Place in 2 greased 8×8 pans, dot with butter. Bake at 350 degrees for 30 minutes.
Freezing Directions:
Do not bake! Instead, cover and freeze. To serve: Thaw. Bake at 350 degrees for 30 minutes. Double bake time if not thawed.
Servings: 8-10

This looks great, but do the potatoes get grainy in the freezer?
Not in my experience.
I can’t wait to read the details. Every time I read about your baking and cooking days, I get inspired. Thanks for giving the link to the freezer mashed potatoes. I make them every Thanksgiving and I was wondering the other day how far ahead I could make them. I didn’t even think about freezing. This will save me so much time!

I totally will be tuning in to this. I would like to start once-a-month cooking myself. I would love to hear your tips on how to adapt current recipes that I may have to freezer meals as well.

I’m loving these cooking and baking days. I’m a brand new wife (4 1/2 months now!) and our household is made up of just my husband and I, however I still love the idea of doing this bulk cooking/baking and having more time to spend together on our busy days! And then, if and when any children may come along.. I’ll already be in the habit of doing this!
Can you sub regular potatoes for the yukon and still have good results? I bought a ton of potatoes recently when they were on sale 10lbs for $.99 and am looking for recipes that I can freeze. Thanks so much!

I am sure you can, it was just recommended that Yukon Gold make the best mash potatoes!
Does it work to just boil the potatoes like regular mashed potatoes instead of using the crockpot?
It does work to just boil them. I recommend this method so that you can do other things at the same time.
For those of you who want to try this but can’t fathom so many hours in the kitchen (comments on the OAMC post yesterday), this is what I have started doing somewhat but need to get better at. I work full-time (teacher) and have a 2 1/2 year old. On Saturdays and at least two weeknights per week, I try to make a one pot crock-pot meal or a casserole that I can throw together the night before (or during nap Saturday). That way when we walk in from Sat. night church service, dinner is ready and when I walk in after my 2 gym afternoons, dinner is ready.
Here is what I started doing sometimes that I need to do more of – doubling the recipe and freezing one portion! It may not be as efficient as OAMC, but it works with my current schedule and still gives me some freezer-ready meals to pull from! What MSM is inspiring me to do is to try to cook and freeze 3 or 4 meals (maybe in double portions) over each school break!
I have also started freezing some of my meat with marinades and then throwing it completely frozen into the crock-pot in the AM when I leave for work with some potatoes–all that is left in the PM is to make a salad or quickly prepare green beans or broccoli to go with it! (got that idea on a guest post here too–it works great!)–And Lawry’s Marinades are often free or almost free at Publix as are salad dressings (can be great marinades, too)!

We do this with a group of us and each of us making a recipe times the number of individuals participating. I love having meals in the freezer! It has so saved us on costs of food. Do you have a recipe for cream of mushroom soup? I would love to not have to buy that!

Can you tell me how you package the meals for freezing them. Do you just put them in a metal 9X13 and then cover the top with tin foil? Does this keep out freezer burn for you?

Yes, drain the potatoes before mashing. Good question though. I should probably indicate that in the recipe.
I have used a similar recipe in the past and for Thanksgiving I reheat them in the crockpot. This frees up space in my oven and also eliminates the need to be whipping potatoes during last minute dinner preparations.
Is the onion salt necessary? I have a child that can’t have onions. Thank you!
Not necessary.
Can i substitute red potatoes?
Yes, you can substitute red potatoes. Yukon were just suggested for least “milly” texture.
This recipe was recommended to me from another blog and I love the idea! I tried to make it tonight and instead of “beat until fluffy” it became “beat into a gluey mess.” Did I do something wrong or is it going to resolve itself when it bakes? Thanks!
