Garlic Balsamic Pork Kabobs

The past couple of months have been rough around my house when it comes to food and mealtimes as I’ve been battling severe morning sickness. If anyone wants to debate about whether freezer cooking is worth it, I’m obviously bias as I write for Once a Month Mom, however, I’m happy to to testify having a full freezer has definitely helped keep my sanity and my family fed during through this puke-y period.

Now that I (crossing my fingers) am finally through what seems to be the worst of the sickness, I’m excited to get back into cooking again and fill my practically empty freezer back up. I have a feeling these Garlic Balsamic Pork Kabobs will be a staple for us this summer.

Garlic Balsamic Pork Kabobs

Ingredients:

  • 2 pounds boneless pork chops, cubed
  • 4 cloves garlic, minced
  • 2 tablespoons dried thyme (optional)
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 1 tsp pepper
  • 0.5 cup balsamic vinegar
  • 0.5 cup olive oil

Directions:

Combine garlic, thyme, sugar, salt, pepper, balsamic vinegar, and olive oil. Add pork cubes and marinate at least one hour. Remove from marinade. Grill or broil on skewers 10-15 minutes, or until done.

Freezing Directions:

Prepare marinade and place with pork in freezer bag(s). Shake to combine. Seal, label, and freeze. To serve: thaw pork. Remove from marinade. Grill or broil on skewers 10-15 minutes, or until done.

    I made these balsamic garlic pork kabobs and I swear it made my pork taste like steak! I also just marinate a whole pork chop and grill them like that. Love this marinade!
