Gift Week: Ice Cream Cake & Ice Cream Giveaway
Well, it couldn’t be a “Gift Week” if I didn’t gift one of you something, now could it? One lucky winner will receive a 6 month supply ($30 value) of Kroger’s Deluxe ice cream. I was gifted with the same thing and decided to pay it forward to gift my husband with an ice cream cake for his birthday. Here is what I made:
Chocolate Peanut Butter Cup Ice Cream Cake

Ingredients:
- .5 Gallon Chocolate Passion Kroger Deluxe Ice Cream
- .5 jar peanut butter
- 12 oz Reese’s Peanut Butter Cups
- 1 cup Oreo Cookie Crumbs
- 3 Tablespoons Sugar
- 1/4 cup butter, melted
Directions:
- If using Oreo’s instead of the pre-boxed Oreo cookie crumbs, blend Oreo’s in food processor. Mix in 3 Tablespoons sugar and 1/4 cup of butter until incorporated.
- Press Oreo crumbs into the bottom of a 9-inch springform pan.
- Bake 5-10 minutes.
- Allow to thoroughly cool.
- Using partially thawed ice cream, scoop half of the half gallon ice cream onto the crust and smooth out with a spoon. Place in freezer to harden 15-20 minutes.
- Remove from freezer when ice cream is mostly frozen and add the peanut butter to the top. Smooth out. (If your peanut butter is thick you might benefit from microwaving it for a few seconds.
- Dice up half of the Reese’s cups. Layer them on top of the peanut butter.
- Place the second half of the half gallon ice cream over the peanut butter and Reese’s cup layer. Smooth it out with a spoon.
- Add remaining Reese’s Cups to top of ice cream. I kept mine whole. If you would like you could chop them and scatter them as well.
- Place in freezer 2-3 hours or until firm. Remove outer edge of springform pan and serve.

This cake is so good! With other flavors I could try a mint chocolate chip cake w/ chocolate fudge & oreos or a strawberry cake w/ sugar cookie! Or a snicker’s cake using some carmel swirl ice cream! With 6 months of endless ice cream we could make some very yummy cakes!

WE would LOVE this in our home. Ice Cream is something that my kids and husband go through so fast that quiet honestly I dont buy that often because of it. Unless of course there is a VERY good sale!
