Ginger Yogurt Parfaits with Cinnamon Pear
Who says breakfast doesn’t need to be gourmet? Perhaps spicing up your breakfast with a little ginger and cinnamon pears is the taste boost you need to get you going in the morning?
I love having a cup of yogurt for breakfast or a smoothie, but honestly I get bored with the flavor combinations sometimes. I know the yogurt companies try to make it appealing with all of their flavors and fillings but sometimes I just want to dress up my yogurt. (After all, someone should be dressed up in this house!)
And the great thing is that you don’t have to spend a ton of time in the kitchen making it happen. These yogurt cups can be thrown together in minutes and frozen. Then simply take them out the night before you want to serve, thaw them in the refrigerator, and you have gourmet breakfast on the go!

Ingredients:
- 2 cups vanilla yogurt
- 1 tablespoon fresh minced ginger root
- 2 cups pears, diced
- 1 teaspoon cinnamon
- 1 Tablespoon sugar
- o.5 teaspoons lemon juice
Directions:
In a medium bowl mix together the yogurt and ginger root. In a gallon freezer bag mix together the pears, cinnamon, sugar and lemon juice until the pears are well coated. In a small plastic container or cup put a 1/2 cup of the yogurt mixture, followed by a 1/2 cup of pear mixture. Repeat. Serve.
Freezing Directions:
Follow directions above but instead of eating, cover and freeze. To serve: Thaw. Enjoy!

Tricia and Christine, Thanks ladies for 2 lovely menus this month… Got some great ideas to try. Just wanted to point out that I think there may be an error in the calculation on the printable recipe cards for the Ginger yogurt parfaits. Check out the servings as I think that if you have 8 cups of yogurt that would make 16 1/2 cup servings ?
I double checked it and the original version makes 4 servings with 2 cups, if you multiply that 4 times for a total of 15 servings for the FULL menu that is 8 cups of yogurt. . .Am I missing what you said is wrong?
