Spring is here and we are getting ready for wonderful weather!   Several of the meals in this menu can be baked indoors or cooked outside on the grill.  As Easter falls in April this year, you will see some baked goods for everyday use that can also be used as part of a delicious Easter brunch meal.  In the Gluten Free Dairy Free April 2012 Menu there is plenty of fresh Spring produce such as asparagus, strawberries, rhubarb, mushrooms and spinach. Yum!

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cook:

    Wow! What a God send! I am so glad that I found you on Pinterest. We have been adjusting to a GF & Dairy free diet for the last 2 months on doctor recommendations for my son, he has Asperger’s and OCD. We have done well, but I can sense everyone getting bored with the same old thing. They are just too sweet to complain! :) We are feeding a family of 5 a healthy diet, which has proved too expensive to mention. This will help us out immensely! Thank you!!!

    So thankful I found this on pinterest! We are trying to switch to a gluten free/dairy free diet for my son to see if it will help with his sleep and behavioral issues. I have been at a complete loss and buying the ready made GF foods which have cost a fortune! I am so trying this menus out. He is a picky eater but I am willing to fight the food battle to get him eating healthy.

    Like the other posters on here I am so grateful I found this website! My husband was recently diagnosed with ulcerative colitis and it has been a challenge to find things he can eat. We have noticed that dairy is a problem and it has been recently suggested to us that gluten may be a problem as well. I was feeling overwhelmed trying to find recipes that accommodate both. Thanks a million times over! I can’t wait to try these!

    We tried the turkey meatballs and they were AWESOME! Definitely one to mix into our regular rotations.

    Question on the cassoulet… how much of it do we prepare before freezing? Do we do the precooking? (Can you do that and freeze it like that?) Do we freeze it with the white wine and pepper or add those when we prepare it? Or do you cook it in the crockpot and all and then reheat after?

      Glad to hear you like the meatballs! :)

      For the cassoulet, you can freeze this dish pre-cooked after cooking in the slow cooker, or with the raw ingredients just mixed in the freezer container to thaw and cook in the slow cooker at a later date. It is very versatile depending on whether you want a meal to cook later in the month, or if you prefer to simply reheat a precooked one. Hope that helps!

    This was my first time doing freezer meals and I picked this menu (we are gfdfef). I did just the dinners but I feel fabulous about having all these meals in my freezer. They all looked delicious. We had the meatballs the same night and they were fantastic. All the kids gobbled them up. I have the cassoulet in the crock pot in the fridge ready to turn on in the morning for dinner, can’t wait!

    I have been searching for good gluten and dairy free menus and am happy to have found your site; however, I can only use some of the menus in here – the first two I looked at have cheese, cream, and sour cream in them. Certainly not dairy free.

    I love this site and have enjoyed eating these recipes. It has really made my life easier, but I really spend a lot of time going over the recipes and quantities because a lot of them don’t really compute into actual quantities, 1 or 2 ingredients are not listed and the cost of buying all these specialty flours is not cheap. I have a bunch of all-purpose gluten-free flour mixes that my mom got and I wonder if I can just use that instead of all these other flours. Some months I have ended up short on ingredients and some I have waaayyy to much. I know this is a really complicated process and time consuming and you have test cooks and all, but a lot of things don’t seem to be caught in the review. I really don’t want to complain because this is really an awesome thing. I just wanted to provide some constructive criticism. Thanks.

      I am sorry you have had issues with ingredient amounts. We try to catch as many things as we can and the test cooks also help ALOT however mistakes do happen. If you could email us any discrepancies you find, that would really help us in finding them and correcting them for your future use and for when others need the menu. Have you considered being a test cook? We need people with that attention to detail to help us out! :)

      You could certainly try replacing a flour blend for equal amounts, however I can’t be sure how the taste and texture would turn out. Gluten free baking is very much a fussy thing as no one GF flour or flour blends acts the same way. I would recommend only trying a smaller sized recipe if you wanted to replace the gf flours and see how it turns out. Waffles and pancakes are easier to replace flours in as they are more forgiving in general. EVERY gf baker uses different blends depending on tastes and availability in their areas. I usually break all flour blends down for people so that if a person is also allergic (or doesn’t have/doesn’t like) a specific gf flour, they can replace with one they can use with similar properties. If you do replace the gf flours with a blend, let us know how it turns out in the comments. That will help others know if it worked or didn’t. :) Thanks!

        Thanks Angela. I know you guys do a lot of hard work and we appreciate it so much. I don’t think I could do the test cook, it would be a financial strain to cook that months and another one, but I would be happy to be your “fact checker”. It’s what I do at work too. I found some mistakes for April, but that doesn’t really help anyone unless they are a month behind, like I seem to always be! So far replacing the individual flours with different all purpose gluten free flours has turned out okay. I used Bob’s for the ones asking for garbanzo or fava flour and potato and tapicoa starch and used Pamela’s baking mix for the ones that need baking powder/soda, almond/walnut flours etc. E-mail me if you would like me to help you guys out in any way. Thanks again!

    We are not stocked in all the individual flours since none of us seem to have an actual allergy…I am just trying to get away from having too much gluten in our diet overall. Could I use a GF all purpose blend in the waffles and rhubarb loaf? I bought quite a bit in a bulk purchase……

    These recipes were super tasty! Thank you! (I particularily liked the meatballs and the Chicken and Rice Casserole, which I used coconut milk in place of the sour cream, since I’m allergic to soy. Yum!)
    My only tiny complaint is with the bread loaf. I’m cooking for 2 and the instructions had me making a half loaf. Is there a way to make the loaf recipes and ingredient lists calculate based on full loaves rather than people in the future? The Strawberry Rhubard bread was delicious, btw!

    Oh I would love to be a test cook as I am doing these every month now. For the poster that had comments about flours, my mother-in-law learned and passed on to be that you can’t “pack” GF flours or you come out with two much. I learned that as well making the patties some months back. Just loosely put it in the measuring cup. My husband loves the asparagus rice and had me make a 2nd batch. This time I omitted the fresh asparagus as it was too “woody” for his picky tastes. This time I used 4 cans of canned asparagus @ $2.00 per can. In order not to pulverize it, I just did a quick turn in the pan after I cut of the heat to mix it in. I also added 4 pounds of cooked chicken this time. Yummy Yummy. I love Onceamonthmom.com!
